ALMOST-FAMOUS GREEN BEAN FRIES

Almost-Famous Green Bean Fries image

T.G.I. Friday's doesn't exactly specialize in health food: The mega-chain is famous for bar food like loaded potato skins and Jack Daniel's-glazed chicken wings. So, it's no surprise that when the restaurant added veggies to the appetizer list, they were deep-fried. The dish, Crispy Green Bean Fries, hit the menu in 2006, and customers went crazy. The beans are coated in a garlicky breading, fried and served with cucumber-wasabi ranch dip. They're a top-seller these days, and fans like Karlyn Siegwarth from Pittsburgh have been begging us for the recipe. Reps in Carrollton, TX, wouldn't give it up, so our chefs created this perfect copy.

Time 1h15m

Yield 2 to 4 servings

Number Of Ingredients 19

1/2 cup ranch dressing
1/2 cup peeled, seeded, chopped cucumber
1 tablespoon horseradish, drained
1 tablespoon milk
1 teaspoon distilled white vinegar
2 teaspoons wasabi powder (found in the spice aisle or with the Asian foods)
Pinch of cayenne pepper
Kosher salt
2 cups low-sodium chicken broth
1/2 pound green beans, trimmed
1 large egg
1/2 cup milk
1 cup instant flour (such as Wondra)
1 cup breadcrumbs
1/4 teaspoon onion powder
1/8 teaspoon garlic powder
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper
Peanut or vegetable oil, for frying

Steps:

  • Make the dip: Puree the dressing, cucumber, horseradish, milk, vinegar, wasabi powder, cayenne pepper, and salt to taste in a blender until smooth. Cover and refrigerate until ready to serve.
  • Prepare the beans: Fill a large bowl with ice water. Bring the broth to a boil in a saucepan over high heat. Add the green beans and cook until tender, about 5 minutes. Remove the beans with a slotted spoon and transfer to the ice water to stop the cooking. Let cool in the water, then drain and pat dry.
  • Whisk the egg and milk in a shallow bowl. Put 1/2 cup flour in another shallow bowl. Combine the breadcrumbs, the remaining 1/2 cup flour, the onion powder, garlic powder, cayenne, and salt and pepper to taste in another bowl.
  • Line a baking sheet with parchment paper. Toss the green beans in the flour and shake off the excess. One at a time, dip the beans in the egg mixture, dredge in the breadcrumb mixture and lay on the prepared baking sheet. Freeze until the coating is set, about 30 minutes.
  • Heat 3 inches oil in a deep pot over medium heat until a deep-fry thermometer registers 350 degrees F. Fry the green beans in batches until golden brown, 1 to 2 minutes. Transfer the beans with tongs or a skimmer to a rack or paper towels to drain. Serve with the dip.

Yield Makes 6 servings

Number Of Ingredients 11

5 pounds fresh fava beans, shelled, or 5 cups frozen double-peeled fava beans (from two 16-ounce packages), thawed
2 tablespoons butter, divided
2 tablespoons olive oil, divided
1 1 1/2-pound piece beef tenderloin, cut in half lengthwise, then crosswise into 1/2-inch-thick slices
2 large onions, finely chopped
1/2 cup whipping cream
1/4 cup fresh lemon juice
2 large egg yolks
2 teaspoons salt
1 teaspoon ground black pepper
2 tablespoons chopped fresh mint

Steps:

  • Cook fresh fava beans in large pot of boiling salted water 2 minutes. Drain favas. Place in large bowl of ice water. Drain. Slip outer skin off each bean and discard skin; place beans in large bowl. (If using frozen beans, do not blanch.)
  • Melt 1 tablespoon butter with 1 tablespoon oil in large nonstick skillet over high heat. Working in batches, add beef and sauté just until browned on both sides, about 2 minutes. Transfer beef to medium bowl.
  • Melt remaining 1 tablespoon butter with 1 tablespoon oil in same skillet over medium heat. Add onions; sauté until tender and golden, about 15 minutes. Add fava beans; sauté 5 minutes. Remove from heat; cool 15 minutes.
  • Meanwhile, whisk whipping cream, lemon juice, egg yolks, salt, and pepper in small bowl to blend. Stir cream mixture into fava bean mixture. Cook over medium-low heat just until sauce thickens slightly and mixture is heated through, about 6 minutes (do not boil). Add beef and stir until heated through, about 3 minutes. Transfer fricassee to rimmed platter. Sprinkle with mint.

Tips:

  • Choose fresh, tender green beans. Look for beans that are bright green and snap easily when you bend them. Avoid beans that are wilted, bruised, or have brown spots.
  • Trim the green beans. Cut off the ends of the beans and remove any strings. You can also blanch the beans by boiling them for 1-2 minutes and then plunging them into ice water. This will help to preserve their color and crispness.
  • Cook the green beans until they are tender-crisp. You can do this by boiling, steaming, or sautéing them. Avoid overcooking the beans, as they will become mushy.
  • Add flavorings to the green beans. You can add a variety of flavorings to the green beans, such as garlic, onion, bacon, herbs, or spices. Be creative and experiment with different flavors.
  • Serve the green beans immediately. Green beans are best served fresh and hot. You can also chill them and serve them cold as a salad.

Conclusion:

Fricassee of green beans is a delicious and versatile dish that can be enjoyed as a side dish or a main course. It is a great way to use up fresh green beans and can be easily customized to your liking. With a few simple tips, you can make a delicious fricassee of green beans that your family and friends will love.
