3 tablespoons olive oil
1 chopped sweet onion
3 cloves garlic, chopped

FRESH TOMATO CORN SOUP

Yield Serves 4

Number Of Ingredients 10

2 cups chopped ripe plum tomatoes (about 14 ounces)
1 1/2 cups V8 vegetable juice
1 cup frozen corn kernels, thawed
2 green onions, finely chopped
1/4 cup chopped green bell pepper
2 tablespoons finely shredded fresh basil or 1 teaspoon dried, crumbled
2 large garlic cloves, minced
Hot pepper sauce (such as Tabasco)
1/4 cup plain low-fat yogurt
Chopped fresh basil or parsley

Steps:

  • Combine tomatoes and juice in large bowl. Add corn, green onions, bell pepper, 2 tablespoons basil and garlic and blend well. Season to taste with hot pepper sauce, salt and pepper. Chill at least 15 minutes and up to 2 hours.
  • Ladle soup into four bowls, dividing evenly. Garnish with yogurt and chopped basil and serve.

Tips:

  • Choose ripe, flavorful tomatoes: The quality of your tomatoes will greatly impact the flavor of your soup, so be sure to use the best tomatoes you can find. Look for tomatoes that are deep red in color, firm to the touch, and have a sweet aroma.
  • Roast the tomatoes before adding them to the soup: Roasting the tomatoes will intensify their flavor and give the soup a smoky, caramelized taste. To roast the tomatoes, simply toss them with olive oil, salt, and pepper, and roast them in a preheated oven at 425°F for 20-25 minutes, or until they are softened and slightly charred.
  • Use fresh corn: Fresh corn is essential for this soup, as it adds a sweet, juicy flavor. If you can't find fresh corn, you can use frozen corn, but be sure to thaw it completely before adding it to the soup.
  • Don't overcook the soup: The soup should be simmered gently for just long enough to heat it through and blend the flavors. Overcooked soup will lose its fresh, vibrant flavor.
  • Serve the soup with your favorite toppings: This soup is delicious on its own, but you can also serve it with a variety of toppings, such as sour cream, grated cheese, chopped cilantro, or crumbled bacon.

Conclusion:

This fresh tomato corn soup is a delicious and easy-to-make soup that is perfect for a summer meal. The roasted tomatoes and fresh corn give the soup a sweet, smoky flavor, and the creamy broth is rich and satisfying. Serve this soup with your favorite toppings for a complete meal.
