Steps:
- Prep the ingredients: Roughly chop the tomatoes, chili peppers, and onions. Be careful while handling the chili peppers. Use a plastic baggie or disposable gloves to handle them, or wash your hands thoroughly with soap and hot water after handling and avoid touching your eyes for several hours. Set aside some of the seeds from the peppers. If the salsa isn't hot enough, you can add a few for more heat.
- Make the salsa: Place all of the ingredients in the bowl of a food processor fitted with the blade. Pulse only a few times, just enough to finely dice the ingredients and not enough to purée. If you don't have a food processor, you can finely dice by hand.
- Adjust seasonings: Place in a serving bowl. Add salt and pepper to taste. If the chilis make the salsa too hot, add some more chopped tomato. If it's not hot enough, carefully add a few of the seeds from the chilis, or add a little more ground cumin. If you like, let the salsa sit for an hour (room temperature or chilled) for the flavors to combine.
- Serve: Serve with chips, tortillas, tacos, burritos, tostadas, quesadillas , or pinto or black beans. The salsa will keep refrigerated for up to 5 days.

Tips:
- Choose ripe, flavorful tomatoes: This is key to making the best salsa. Look for tomatoes that are deep red in color and have no blemishes.
- Use a variety of tomatoes: This will give your salsa more flavor and depth. Try using a mix of Roma, cherry, and heirloom tomatoes.
- Don't over-chop the tomatoes: This will make the salsa too watery. Instead, dice the tomatoes into small pieces.
- Use fresh cilantro and onions: These ingredients add brightness and flavor to the salsa. If you don't have fresh cilantro, you can use dried cilantro, but it won't be as flavorful.
- Add some heat: If you like your salsa spicy, add some chopped jalapeño or serrano pepper. You can also add some cayenne pepper or chili powder.
- Let the salsa sit for a while before serving: This will allow the flavors to meld together. If you can, let it sit for at least 30 minutes, but overnight is even better.
Conclusion:
Fresh salsa is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It's also a great way to use up ripe tomatoes. With a few simple ingredients and a little bit of time, you can make a delicious salsa that will be enjoyed by everyone. So next time you're looking for a quick and easy way to add some flavor to your meal, give this fresh salsa recipe a try.
