SALMON WITH FRESH PINEAPPLE SALSA

Salmon With Fresh Pineapple Salsa image

I don't remember where I learned to make this, but I'm sure I must have changed the recipe somewhat. This is my favorite way to fix salmon. The salmon can be prepared in any way. Grilling it is also wonderful! The preparation time includes the time to chill the salsa.

YELLOWFIN TUNA WITH FRESH PINEAPPLE SALSA

Categories     Weeknight

Time 30m

Yield 2 pieces, 2 serving(s)

Number Of Ingredients 10

2 cups pineapple, diced
1/2 cup cilantro, chopped
1/4 cup red onion, finely chopped
1 habanero pepper, stemmed, seeded, and finely chopped
2 tablespoons lime juice (about 1 lime)
1/8 teaspoon salt
1/2 lb yellowfin tuna fillet (sliced into 2-inch thick pieces, the thicker the better, mine were about 1.5-inch)
1 teaspoon garlic powder
1/2 teaspoon sea salt
ground pepper

Steps:

  • Slice the top of pineapple and the bottom off. Stand the pineapple on its side and with a sharp knife, slice sides of pineapple off. Cut the pineapple into small slices and then remove the core of each slice. (The core tends to be hard to eat, but I've had some pineapples were it was soft). Dice the remaining pineapple into small pieces.
  • Toss all of the ingredients into a bowl and chill for a couple of hours to let the flavors marinate.
  • Season each side of the fish with garlic powder, fresh ground pepper and sea salt.
  • Heat grill to medium high heat. Grill each side for about 4-5 minutes, until inside of the fish is a nice medium rare. Top with pineapple salsa! Enjoy!

PORK TENDERLOIN WITH FRESH PINEAPPLE SALSA

Pork Tenderloin With Fresh Pineapple Salsa image

This is a somewhat tweaked version of a recipe I found in the 2007 Taste of Home The Busy Family Cookbook, & then it was reduced to serve 2 of us!

Provided by Sydney Mike

Categories     Pineapple

Time 45m

Yield 2 serving(s)

Number Of Ingredients 9

1 (3/4 lb) pork tenderloin
3 tablespoons dark brown sugar, packed, divided
2 tablespoons honey dijon mustard
1 teaspoon paprika
1/2 teaspoon ground ginger
1/3 cup red bell pepper, diced small
2 tablespoons green onions, sliced thin
1 cup fresh pineapple, sliced, diced small
1/4 cup pineapple juice, unsweetened

Steps:

  • Preheat oven to 450 degrees F, then put the pork tenderloin in a roasting pan.
  • In a small bowl, combine 2 tablespoons of the brown sugar with the Dijon mustard, paprika & ginger, then spread HALF of this mixture over the pork tenderloin, before baking uncovered for 15 minutes.
  • When the 15 minutes are up, spread the pork with the remaining brown sugar mixture & bake 15 to 20 minutes longer, or until a meat thermometer reads 145 degrees F, but if you're a traditionalist, you'll want the thermometer to read 160 degrees F!
  • Meanwhile, for the salsa, in a small mixing bowl, combine the bell pepper & onion with the last tablespoon of brown sugar, along with the cup of diced pineapple & pineapple juice.
  • When the pork comes out of the oven, let it stand briefly before slicing the meat & serving it with a generous portion of salsa.

MAHI-MAHI WITH FRESH PINEAPPLE SALSA

Mahi-Mahi With Fresh Pineapple Salsa image

We love mahi mahi and pineapple and hope to try this Hawaiian dish soon. From Diabetic Cooking. The salsa can be prepared 1-2 days in advance.

Provided by Vicki Butts (lazyme)

Categories     Fish

Time 25m

Number Of Ingredients 11

1 1/2 c diced fresh pineapple
1/4 c finely chopped red bell pepper
1/4 c finely chopped green bell pepper
2 Tbsp chopped fresh cilantro
2 Tbsp fresh lime juice, divided
1/2 tsp red pepper flakes
1/2 tsp grated lime peel
nonstick cooking spray, as needed
4 mahi mahi fillets (4-ounces each)
1 Tbsp olive oil
1/2 tsp freshly ground white pepper

Steps:

  • 1. To prepare Pineapple Salsa: Combine pineapple, red and green peppers, cilantro, 1 tablespoon lime juice, red pepper flakes and lime peel in medium bowl. (Pineapple Salsa may be prepared 1 to 2 days ahead and refrigerated.)
  • 2. Preheat broiler. Spray rack of broiler pan with cooking spray. Rinse mahi-mahi and pat dry with paper towels. Place mahi-mahi on rack. Combine remaining 1 tablespoon lime juice and olive oil; brush on mahi-mahi.
  • 3. Broil mahi-mahi, 4 inches from heat, 2 minutes. Turn and brush second side with olive oil mixture; sprinkle with white pepper. Continue to broil 2 minutes or until mahi-mahi flakes easily when tested with fork.
  • 4. Serve with Pineapple Salsa.

Tips:

  • Selecting the right pineapple: Choose a ripe pineapple with vibrant yellow skin and a sweet aroma. Avoid fruits with bruises or brown spots.
  • Preparing the pineapple: Cut off the crown and base of the pineapple. Remove the outer skin by slicing downwards, following the curve of the fruit. Cut the pineapple into quarters, then remove the tough core.
  • Using fresh ingredients: Fresh ingredients provide the best flavor and texture for salsa. Choose ripe tomatoes, onions, cilantro, and peppers. If using canned ingredients, drain and rinse them thoroughly before adding.
  • Balancing flavors: Adjust the ingredients to suit your taste preferences. If you prefer a spicier salsa, add more jalapeños. For a sweeter salsa, add more pineapple or honey.
  • Chilling the salsa: Refrigerate the salsa for at least 30 minutes before serving. This allows the flavors to meld and develop.

Conclusion:

Homemade pineapple salsa is a versatile condiment that adds a burst of freshness and flavor to various dishes. Whether you're serving it as a dip with tortilla chips, using it as a topping for tacos or burritos, or enjoying it as a refreshing side dish, this salsa is sure to impress. With its vibrant colors and tantalizing flavors, pineapple salsa brings a tropical flair to any meal. So next time you're looking for a flavorful and healthy addition to your culinary creations, give this fresh pineapple salsa a try. You won't be disappointed!
