FRESH PINEAPPLE SALAD
I got this recipe from The Ayurvedic Cookbook. It's a very simple salad. I think this would be good mixed with some coconut (or other flavored) yogurt.

Steps:
- 1. Use a sweet ripe pineapple for this recipe. Peel and core it. Cut into 1" cubes.
- 2. Mix the rest of the ingredients and if you like add some coconut yogurt to it, I think it really would add here. This can be stored in the fridge for 6-8 hours.
- 3. Enjoy!
Tips:
- Choose ripe pineapple: Look for pineapples with bright yellow skin and a sweet, fragrant smell. Avoid pineapples with green skin or bruises.
- Cut the pineapple properly: To cut a pineapple, first slice off the top and bottom. Then, cut the pineapple in half lengthwise. Remove the core from each half, then slice the pineapple into thin slices.
- Use fresh ingredients: Fresh pineapple, mint, and lime juice will give your salad the best flavor. If you can't find fresh pineapple, you can use canned pineapple, but be sure to drain it well before using.
- Chill the salad before serving: Chilling the salad for at least 30 minutes before serving will help the flavors to meld and will make the salad more refreshing.
- Serve the salad with a variety of toppings: You can serve the salad with a variety of toppings, such as chopped nuts, crumbled cheese, or fresh fruit. This will add extra flavor and texture to the salad.
Conclusion:
Fresh pineapple salad is a delicious and refreshing side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste. With its bright flavors and tropical vibes, this salad is sure to be a hit at your next gathering. So, next time you are looking for a healthy and delicious side dish, give this fresh pineapple salad a try. You won't be disappointed!
