FRESH PEACH TORTE

My all time favourite dessert that's foolproof and always loved. I've been making this for 25 years. I've made it often with strawberries, just use about 1 lb (1 litre); have also used rhubarb, blueberries, nectarines.... You can use light or regular sour cream. A guaranteed winner!

This is my MIL recipe. She gave it to me after she knew I could cook. But I still like her to make it every once in a while.

Time 2h30m

Yield 9 serving(s)

Number Of Ingredients 6

2 cups fresh peaches
2 cups mini marshmallows
2 cups graham cracker crumbs
1/2 cup butter
1/2 cup sugar
1 1/2 cups Cool Whip

Steps:

  • Set aside 1/2 cups of graham cracker crumbs. Add melted butter and sugar to the rest of the graham cracker crumbs and press into an 8-inch square baking pan.
  • Chop peaches.
  • Heat marshmallow until soft over double boiler and mix in peaches. Remove from heat and stir in cool whip.
  • Pour into lined pan.
  • Top with the reserved 1/2 cups graham cracker crumbs.
  • Chill about 2 hours.

Tips:

  • For a perfectly golden crust, brush the pastry dough with an egg wash before baking.
  • If you don't have a pastry brush, you can use a spoon to spread the egg wash.
  • To prevent the crust from getting too brown, cover it with foil during the last 10 minutes of baking.
  • Let the torte cool completely before serving. This will help the filling to set and the crust to crisp up.
  • Serve the torte with fresh peaches, whipped cream, or ice cream.
  • You can also add a dollop of peach jam or preserves to the center of each slice of torte.

With a few simple tips, you can make this torte a success. So preheat your oven and get ready to enjoy this delicious treat!
