¾ cup whole milk
2 teaspoons vanilla
2 eggs
1 cup sugar
½ cup self-rising flour
2 packages (8 oz.) cream cheese
1 teaspoon lemon zest
topping:
4 fresh peaches
2 tablespoons brown sugar

Once cooled, wrap the cake pan in aluminum foil and place into a pan. Fill the pan with water until the water reaches halfway up the sides of the cake pan. Without cleaning out the food processor, combine all ingredients for the cheesecake filling. Process until the mixture is light and creamy. Pour into the prepared cake pan. Tips:

  • Select ripe peaches: Choose peaches that are fragrant, slightly soft when pressed, and have a deep yellow or orange color. Avoid peaches that are bruised or have green areas.
  • Prepare the peaches: Wash the peaches thoroughly, then peel and slice them. You can also leave the skin on if you prefer. If you're using frozen peaches, thaw them before using.
  • Use fresh lemon juice: Fresh lemon juice adds a bright, citrusy flavor to the topping. Avoid using bottled lemon juice, as it doesn't have the same fresh flavor.
  • Don't overcook the topping: The topping should be cooked until the peaches are softened and the sauce has thickened, but be careful not to overcook it, as the peaches can become mushy.
  • Serve the topping warm or cold: The topping can be served warm or cold, depending on your preference. It's delicious on pancakes, waffles, French toast, ice cream, or yogurt.

Conclusion:

This fresh peach topping is a versatile and delicious recipe that can be used to add a touch of sweetness and flavor to a variety of desserts.
