1 tablespoon vegetable oil
1 cup chopped onion
5 tablespoons sugar
1 1/2 cups dry red wine
3/4 cup reduced-sodium soy sauce
1/4 cup balsamic vinegar
2 1/2 tablespoons finely chopped peeled fresh ginger
1 1/2 teaspoons ground cinnamon
1/2 teaspoon coarsely ground black pepper
3 14- to 16-ounce pork tenderloins
3 medium peaches, blanched in boiling water 1 minute, peeled, pitted, chopped
2 tablespoons chopped fresh chives

  • Heat oil in heavy medium saucepan over medium-high heat. Add onion and sugar. Sauté until onion is golden, about 6 minutes. Mix in wine and next 5 ingredients. Cook 1 minute longer. Remove from heat. Cool sauce completely.
  • Place pork in large resealable plastic bag. Pour 1 cup sauce over pork. Seal and refrigerate at least 6 hours or overnight, turning meat occasionally. Cover remaining sauce separately and refrigerate.
  • Prepare barbecue (medium heat). Remove pork from marinade; discard marinade. Grill pork until meat thermometer inserted into center registers 155°F, turning often, about 35 minutes.
  • Meanwhile, boil remaining sauce in heavy medium saucepan until reduced by half, about 5 minutes. Add peaches. Stir until heated through, about 1 minute. Slice pork and arrange on platter. Spoon some sauce over. Top with chives. Pass remaining sauce separately.

FRESH PEACH SUNDAE SAUCE

Fresh Peach Sundae Sauce image

Found this one on the recipe wall at Wilson Farms in Lexington MA. I haven't tried this yet (I haven't come across good fresh peaches lately), but I definitely intend to. If you prefer, the oj can be subbed with orange liqueur or peach brandy.

Time 25m

Yield 4-6 serving(s)

Number Of Ingredients 7

1/4 cup sugar
2 teaspoons cornstarch
1/8 teaspoon nutmeg
1/8 teaspoon cinnamon
1/3 cup water
2 tablespoons orange juice
2 cups peeled sliced ripe peaches

Steps:

  • In a 2-quart saucepan, stir together the sugar, cornstarch, nutmeg and cinnamon. Mix in the water and juice. Bring this to a boil over medium heat, stirring constantly. Reduce heat and simmer for one minute.
  • Stir in the peaches and continue simmering for 4 to 5 minutes, stirring occasionally, until peaches soften slightly. Remove from heat. Because the peaches will continue to cook in the hot syrup, you don't want to overcook them while pan is on the heat.
  • Serve warm or cold over ice cream.

FRESH PEACH DUMPLINGS SERVED WITH HARD SAUCE

Fresh Peach Dumplings Served with Hard Sauce image

This is fresh peaches wrapped in a rich flakey dough, and topped with a teaspoon of hard sauce after baked. No sugar is used on the peaches, just the sauce. Sugar free ice cream could be used instead of hard sauce.

Time 1h

Yield 6

Number Of Ingredients 11

2 cups all-purpose flour
1 teaspoon salt
¾ cup butter flavored shortening
5 tablespoons ice water
6 fresh peaches - peeled, pitted and halved
¼ cup butter, softened
1 egg
¼ teaspoon ground nutmeg
1 teaspoon vanilla extract
1 pinch salt
2 cups confectioners' sugar

Steps:

  • In a medium bowl, stir together the flour and salt. Cut in the butter flavored shortening using your hands or a pastry blender until the mixture resembles coarse crumbs. Sprinkle the ice water over the dough, and stir until the mixture comes together. Knead the dough briefly, then divide into 6 pieces.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • On a lightly floured surface roll out each piece of dough into a thin circle. Place two peach halves together, and wrap in each circle of dough, sealing at the top. Place the dumplings onto an ungreased baking sheet.
  • Bake dumplings for 30 minutes in the preheated oven, or until golden brown. While the dumplings are baking, make the sauce. In a medium bowl, mix together the butter, egg, nutmeg, vanilla and salt using an electric mixer on low speed. Gradually mix in the confectioners' sugar. Spoon over warm dumplings.

FRESH PEACH SAUCE

Fresh Peach Sauce image

This peach sauce is wonderful to use over ice cream or pound cake when fresh peaches are in season. The orange liqueur and brandy really bring out the delicious peach flavor.

Provided by Bayhill

Categories     Sauces

Time 25m

Yield 2 1/2 cups

Number Of Ingredients 7

3 fresh peaches (medium size, peeled and pits removed)
1/4 cup granulated sugar
3 tablespoons orange juice concentrate (thawed)
1 tablespoon peach jam
1 cup fresh peach (peeled and sliced)
1 1/2 tablespoons triple sec or 1 1/2 tablespoons other orange-flavored liqueur
1 1/2 tablespoons brandy

Steps:

  • Place the 3 peeled and pitted peaches in container of an electric blender; process until smooth, stopping once to scrape down sides.
  • Pour puree into a medium saucepan. Stir in sugar, orange juice, and jam; bring just to a boil over medium heat, stirring constantly.
  • Stir in 1 cup peach slices, Triple Sec, and brandy.
  • Serve warm over ice cream or pound cake.

Tips:

  • Choose ripe peaches: The riper the peaches, the sweeter and more flavorful the sauce will be. Look for peaches that are slightly soft to the touch and have a deep yellow color.
  • Peel the peaches: Peeling the peaches is optional, but it will give the sauce a smoother texture. To peel the peaches, simply use a sharp knife to score a shallow X on the bottom of each peach. Then, place the peaches in a pot of boiling water for 1-2 minutes, or until the skins start to peel away. Remove the peaches from the boiling water and immediately transfer them to a bowl of ice water to stop the cooking process. Once the peaches are cool, you can easily peel the skins off.
  • Use a variety of spices: Don't be afraid to experiment with different spices to add flavor to your peach sauce. Some good options include cinnamon, nutmeg, ginger, and allspice.
  • Sweeten the sauce to taste: The amount of sugar you add to the sauce will depend on the sweetness of the peaches. Start with a small amount of sugar and add more to taste.
  • Serve the sauce warm or cold: Peach sauce can be served warm or cold. It is delicious on pancakes, waffles, ice cream, or yogurt.

Conclusion:

Fresh peach sauce is a delicious and versatile sauce that can be used in a variety of dishes. It is easy to make and can be tailored to your own taste preferences. Whether you like it sweet, spicy, or somewhere in between, there is a peach sauce recipe out there for you. So next time you have a bunch of ripe peaches, give one of these recipes a try.
