8 cups (2 litre) water (divided)
3 cups granulated sugar
7 peaches
1 cup (250ml) lemon juice (freshly squeezed)

Steps:

  • Mix together the sugar and 3 cups of water in a saucepan and add in the whole peaches.
  • Place the saucepan over a medium flame and stir occasionally until the sugar has dissolved.
  • Bring to the boil and boil for 2 minutes.
  • Switch of the heat and allow the syrup cool with the peaches in it.
  • Strain and decant into a container and keep the peach simple syrup in the fridge until required.
  • In a large pitcher, combine 1 1/4 cups peach simple syrup, 1 cup fresh lemon juice and 4-5 cups of water.
  • Chill in a refrigerator till needed.
