Number Of Ingredients 8

12 ounces puff pastry (ready made, thawed)
all-purpose flour, for dusting
3 fresh peaches
2/3 cup sour cream
4 tablespoons brown sugar
4 -5 tablespoons pecans (toasted and finely chopped)
1 egg, beaten (to glaze)

  • If your peaches are not ripe, you can speed up the ripening process by placing them in a paper bag with a banana or apple.
  • To make the empanada dough, you can use a food processor or a stand mixer. If you're using a food processor, pulse the ingredients until they come together to form a ball.
  • If you're using a stand mixer, mix the ingredients on low speed until they come together to form a ball.
  • Once the dough is formed, wrap it in plastic wrap and refrigerate it for at least 30 minutes before rolling it out.
  • When rolling out the dough, use a lightly floured surface to prevent the dough from sticking.
  • To fill the empanadas, place a spoonful of the peach mixture in the center of each circle of dough.
  • Fold the dough over the filling and seal the edges with a fork.
  • Bake the empanadas in a preheated oven until they are golden brown.
  • Let the empanadas cool slightly before serving.
