FRESH PEACH COBBLER (THE UPSIDE DOWN VERSION)

Fresh Peach Cobbler (The Upside Down Version) image

Adapted from FoodTV's Sara Moulton. I've tweaked the fruit part quite a bit. In the summer, when we harvest peaches and blueberries, I make a large batch of the fruit part. I freeze it in recipe-quantity and then thaw for year-round cobbler. This recipe starts upside down with the cobbler dough on the bottom of the pan. The dough will migrate to the top and make a true cobbler crust. My kids like to watch thru the oven door as this happens. If you love crust, make a half batch of the fruit and a full batch of the dough. Cook in a 9x13 pan and you'll have just enough fruit (1/4 inch) to go with the crispy goodness. It's wonderful warm over vanilla icecream. I'll admit to eating it cold (leftover) for breakfast when no one is looking. If I use blueberries, I use 1 cup blueberries to 3 cups peaches. I'm sure it would work with other fruits.

Categories     Dessert

Time 1h

Number Of Ingredients 12

4 cups peeled pitted and thinly sliced fresh peaches (5 to 6 medium peaches)

  • Pour the melted butter into a 13 by 9 by 2-inch baking dish.
  • In a medium bowl, combine the flour, 1 cup sugar, the baking powder, and the salt and mix well. Stir in the milk, mixing until just combined. Pour this batter over the butter but do not stir them together.
  • Pour the peaches over the batter but do not stir them together.
  • Bake in the preheated oven for 40 to 45 minutes or until the top is golden-brown. Serve warm or cold.

GEORGIA FRESH PEACH COBBLER

Georgia Fresh Peach Cobbler image

Make and share this Georgia Fresh Peach Cobbler recipe from Food.com.

Provided by ratherbeswimmin

Categories     Dessert

Time 1h50m

Yield 8 serving(s)

Number Of Ingredients 12

2 lbs just ripe freestone peaches
2/3 cup light brown sugar, packed
1 tablespoon unsalted butter
1 1/4 cups water
1 1/2 cups sifted all-purpose flour
1 tablespoon baking powder
salt, a pinch
2 tablespoons unsalted butter
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
2/3 cup light brown sugar, firmly packed
3/4 cup milk

Steps:

  • Blanch and peel peaches; cut them in half; remove the pits, and slice them coarse.
  • Note: to blanch peaches-have ready a large bowl of ice-cold water, a slotted spoon, and a saucepan of boiling water deep enough to cover the peaches; with the slotted spoon place the peaches in the boiling water, two or three at a time (if the peaches are fully ripe, they will need only about 15 seconds in the boiling water, if not quite ripe, they will need more); with the slotted spoon, raise a peach from the water and move your thumb firmly over the skin; if the skin has loosened enough it will wrinkle and feel loose; at that point transfer it to the ice water; peel with your fingers, starting at the stem end.
  • Place sliced peaches in a 3-quart saucepan with the sugar, butter, and water; stir briefly over med-high heat just until the mixture comes to a boil; remove from the heat and set aside.
  • Adjust oven rack to the middle of the oven; preheat to 375°.
  • Generously butter a shallow ovenproof baking dish with at least a 2-quart capacity; it can be larger but not smaller.
  • Sift together the flour, baking powder, and salt; set aside.
  • In a small bowl, beat the butter with the vanilla and almond extract; beat in the sugar to mix.
  • On low speed add in half of the milk, then half of the sifted dry ingredients, the remainder of the milk then the remainder of the dry ingredients, scraping the sides of the bowl with a rubber spatula as needed and beating only until mixed.
  • Pour the batter into the baking dish and spread it smooth.
  • With a large slotted spoon, place the prepared peaches evenly over the batter (reserve the peach syrup for the moment); place the dish in the oven.
  • Now, pouring the peach syrup (it will be thin) over the fruit will be easier if you pour it in two additions into a 2-cup measuring cup, then reach into the oven and quickly pour it over the top of the fruit in the baking dish.
  • Place a cookie sheet on a rack below the baking dish to catch spills.
  • Bake for 20 minutes; then decrease temperature to 325° and bake for 25 minutes.
  • Serve immediately or within 20-30 minutes on large flat plates or in dessert bowls, spooning some of the thickened syrup from the bottom over or alongside each portion.
  • Serve plain or with ice cream.

FRESH PLUM OR PEACH COBBLER MUFFINS

Fresh Plum or Peach Cobbler Muffins image

This is an variation on a recipe found in The Muffin Lady cookbook. I used plums, because that's what I had, but peaches would be delicious, too. She says to use unripe fruit, as it will ripen up and get sweet during cooking. Also, use sliced fruit rather than chopped, because chopped will tend to "get lost" during baking. These muffins are like a hand held fruit cobbler. So good!

Provided by ciao4293

Categories     Quick Breads

Time 45m

Yield 6 large muffins

Number Of Ingredients 10

2 firm plums or 2 peaches
2 cups flour
1 cup sugar
1 tablespoon baking powder
1 teaspoon salt
4 tablespoons melted butter
1/4 cup oil
3/4 cup milk
1 teaspoon vanilla extract
cinnamon, for dusting muffin tops

Steps:

  • Heat oven to 350 degrees.
  • Peel and slice fruit into 6 slices each.
  • Sift the dry ingredients, making a well in the center.
  • Pour wet ingredients into the well, and blend by hand.
  • (Batter will be thicker than regular muffin batter.) Scoop batter into lightly greased, large 6 muffin pan.
  • Insert 2 plum or peach wedges into each muffin.
  • (They will be sticking out over the batter. This is ok) Sprinkle muffin tops with cinnamon.
  • Bake for 30 minutes, or until center of muffins is resistant to touch.
  • Cool 5 minutes in pan, then turn out on rack to cool.

SOUTHERN BOURBON FRESH PEACH COBBLER

Southern Bourbon Fresh Peach Cobbler image

I've pieced it together from a few recipes to get the balance I like between fruit and topping. It's great for serving to guests and definitely best with some ice cream. This is also great vegan with water or apple juice replacing the buttermilk, and margarine instead of butter. You could even serve it with tofrutti ice cream.

Time 1h30m

Yield 8-10 serving(s)

  • Pour melted butter into an 8x11" baking pan.
  • Spoon dough mixture over butter evenly, but leaving some gaps (this helps the dough rise over the peaches later.
  • Pour peaches over dough.
  • Bake for about 1 hour at 350F, or until the crust has risen to top of cobbler and crisped slightly. Can add a bit of sugar to top of cobbler just before finished and place in broiler to get a crisper caramelized topping, but beware this can be tricky.

Time 1h25m

Yield 1 loaf

Number Of Ingredients 12

1/3 cup butter, softened
1 cup sugar
2 eggs
1/3 cup water
1 teaspoon vanilla
1 cup diced peeled peach
1 2/3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup chopped pecans
2 tablespoons brown sugar

Steps:

  • Cream butter and sugar.
  • Add eggs, one at a time, beating well after each.
  • Beat in water and vanilla.
  • Combine dry ingredients and add to creamed mixture.
  • Stir in peaches.
  • Pour into greased 9x5x3 loaf pan.
  • Combine ingredients for topping and sprinkle over.
  • Bake at 350 degrees for 50 to 55 minutes or until toothpick inserted in center comes out clean.
  • Cool for 10 minutes, then remove from pan to wire rack.

Tips:

  • Choose ripe, flavorful peaches: The quality of your peaches will directly impact the flavor of your cobbler. Look for peaches that are plump, fragrant, and have a slight give when you press them gently.
  • Peel your peaches: Peeling your peaches will give your cobbler a cleaner, more elegant look. To peel peaches easily, score an X in the bottom of each peach and then place them in boiling water for 30 seconds. The skins will then slip off easily.
  • Use a variety of peaches: If you can, use a mix of white and yellow peaches in your cobbler. This will give you a more complex flavor and a more visually appealing dish.
  • Make your own biscuit topping: The biscuit topping is what really makes this cobbler special. It's light, fluffy, and buttery, and it perfectly complements the sweet, juicy peaches. If you don't have time to make your own biscuit topping, you can use a store-bought pie crust or even a box of yellow cake mix.
  • Don't overcook the cobbler: The cobbler is done when the topping is golden brown and the juices are bubbling around the edges. Overcooking the cobbler will make the topping tough and the peaches mushy.

Conclusion:

Fresh peach cobbler is a classic summer dessert that is easy to make and always a crowd-pleaser. With its sweet, juicy peaches, buttery biscuit topping, and irresistible aroma, this cobbler is sure to be a hit at your next potluck or barbecue. So next time you have a craving for something sweet and delicious, give this fresh peach cobbler a try. You won't be disappointed!
