3 tablespoons papaya seeds and pulp
4 tablespoons white balsamic vinegar
1 tablespoon agave nectar
1 teaspoon Dijon mustard
1/4 teaspoon freshly grated ginger
1/4 teaspoon kosher salt
freshly ground black pepper
1/3 cup olive oil

Steps:

  • Place papaya, papaya seeds and pulp in a blender and puree until smooth.
  • Add the vinegar, agave nectar, Dijon mustard, ginger, salt and pepper and blend.
  • Add the olive oil and blend again. Adjust seasoning with salt and pepper if necessary.

1 tablespoon fresh papaya seeds
1/2 small onion
1/4 cup raspberry vinegar (or other try other flavors)
1/4 cup sugar
1/4 teaspoon salt
1 teaspoon dry mustard
1/2 cup vegetable oil

Steps:

  • In a food processor, whir together the papaya seeds and onion until finely chopped.
  • Add the vinegar, sugar, salt, and mustard and pulse 3 or 4 times.
  • With the processor running, gradually add the oil in a thin stream until dressing emulsifies.
  • Use on your favorite salad greens.
  • Good with a bit of crumbled feta added, too!

½ red onion, diced
1 red bell pepper, seeded and diced
¼ cup chopped fresh basil leaves
2 tablespoons white sugar
¼ cup red wine vinegar
¼ cup vegetable oil
½ teaspoon mustard powder
2 green onions, chopped
1 French baguette, cut into 1/2 inch pieces

Steps:

  • Cut papaya in half and remove seeds. Reserve 2 tablespoons of seeds for the dressing. Peel and dice the papaya, and place in a medium bowl. Add tomatoes, red onion, red pepper and basil, and set aside.
  • In a food processor or blender, combine the papaya seeds, sugar, wine vinegar, oil, mustard and green onions. Process until smooth and thick, and most of the seeds have broken up. Pour over the papaya mixture and stir to coat all of the ingredients. Serve with slices of baguette.

1 cup sugar
1 1/2 teaspoons salt
1 tablespoon English-style dry mustard
1 cup tarragon vinegar
1 cup vegetable oil
1/4 cup minced onion
1 papaya, halved, reserving 3 tablespoons of the seeds and reserving the fruit for another use

Steps:

  • In a blender or food processor blend the sugar, the salt, the mustard, and the vinegar until the mixture is smooth. With the motor running add the oil in a stream and blend the dressing until it is emulsified. 1/2 cup plain low-fat yogurt
4 tablespoons tahini
1 tablespoon lemon juice

(If you're having trouble with the tahini stubbornly sticking to the blades or sides, you can premix it by hand with the lemon juice, and then some of the yogurt.)
