Time 45m

Number Of Ingredients 10

4 seedless oranges
1 bottle (750 ml) light-bodied red wine (recommended: Beaujolais or a young Chianti)
2 cups brewed cinnamon or other spiced tea
2 cinnamon sticks
4 whole cloves
2 star anise pods
6 black peppercorns
1/4 cup honey
1/4 cup light brown sugar, packed
4 fresh mint leaves, julienned

Steps:

  • Cut a slice off the top and bottom of each orange to expose the flesh. Cutting from top to bottom, following the contours of the orange, completely remove the peel and white pith. Discard the peel and set the oranges aside. In a saucepan, combine all of the remaining ingredients except the mint leaves. Heat to a simmer. Add the whole peeled oranges and simmer, uncovered, 10 minutes, turning the oranges every 2 minutes. Remove from the heat and set aside to cool to room temperature in the liquid, turning occasionally. Chill. To serve, cut each orange crosswise into 1/2-inch-thick slices. Spread the slices, overlapping them, on small serving plates. (The outsides of the oranges will be redder than the insides.) Drizzle a little liquid over each plate and sprinkle with mint.

Yield Makes 2 (750-ml) bottles

Number Of Ingredients 7

2 (750-ml) bottles dry white wine
1/2 cup sugar
1/4 cup orange liqueur such as Grand Marnier
1/4 cup Pernod
2 whole cloves
4 Turkish or 2 California bay leaves
2 navel oranges

Steps:

  • Bring all ingredients except oranges to a boil (reserve wine bottles and corks), stirring until sugar has dissolved.
  • Remove zest from oranges in a continuous spiral using a vegetable peeler and cut off any white pith with a paring knife. Reserve oranges for another use and divide zest between empty wine bottles.
  • Fill bottles with orange wine and cool, uncorked, 1 hour.
  • Cork bottles, then chill at least 4 hours.

Tips:

  • Select high-quality oranges: Choose oranges that are firm, heavy for their size, and have a deep orange color. Avoid oranges with blemishes or soft spots.
  • Use a sharp knife: A sharp knife will help you to easily peel and segment the oranges without tearing the flesh.
  • Remove the pith: Be sure to remove the white pith from the oranges before slicing them. The pith is bitter and can ruin the flavor of the dish.
  • Make the spiced red wine syrup ahead of time: The syrup can be made up to 3 days in advance. This will allow the flavors to meld and develop.
  • Serve the oranges chilled: The oranges should be served chilled for the best flavor. You can chill them for at least 30 minutes before serving.
