TOMATOES WITH BASIL AND ANCHOVIES

Tomatoes With Basil and Anchovies image

A great tomato salad starts with great tomatoes. Buy ripe tomatoes in season from the market or farm stand, or, even better, pick them straight from the garden. The anchovies (they are rinsed briefly to tame them) are an important feature, the perfect counterpoint to the tomatoes' sweetness. Add a large handful of aromatic basil leaves just before serving.

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 10

2 small garlic cloves, minced
1 small shallot, diced
2 tablespoons red wine vinegar or sherry vinegar
4 tablespoons extra-virgin olive oil
Salt and pepper
12 anchovy fillets
1/2 cup milk (optional)
3 pounds ripe tomatoes, any size, cut in wedges, slices or halves
1 1/2 cups basil leaves, not too big, washed and dried
Pinch of crushed red pepper (optional)

Steps:

  • Make the vinaigrette: Put garlic, shallot and vinegar in a small bowl. Whisk in 3 tablespoons olive oil. Season with salt and pepper.
  • Put anchovies in a small bowl and cover with milk. Leave for 5 minutes, then carefully rinse with water and blot with paper towels. (Alternatively, skip the milk and simply rinse anchovies with water and blot.) Transfer to a small plate and drizzle with 1 tablespoon olive oil.
  • About 5 or 10 minutes before serving, place tomatoes in a large, deep platter or low-sided serving bowl. Season generously with salt and pepper, then add vinaigrette and toss gently to coat.
  • Just before serving, add the basil leaves and toss gently. Garnish with anchovy fillets and a sprinkling of crushed red pepper, if desired.

TOMATO TART WITH FRESH MOZZARELLA AND ANCHOVIES

Tomato Tart With Fresh Mozzarella and Anchovies image

This rectangular tart is like a pizza but easier. Instead of a yeast dough, the base is a crisp pastry made with olive oil. The recipe makes enough dough for 2 tarts.

Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 12

2 cups/250 grams all-purpose flour
1/2 teaspoon salt, plus more for seasoning tomatoes
1/4 cup/59 milliliters extra-virgin oil, plus 2 tablespoons and a little more to grease the pan
1 egg, beaten
1 large garlic clove, grated
1 cup thinly sliced onion
2 large tomatoes, sliced 1/4-inch thick and blotted
Ground black pepper
1/2 pound fresh mozzarella, thinly sliced
A few pitted niçoise olives, optional
A few capers, optional
8 anchovy fillets, rinsed and patted dry

Steps:

  • Make the dough: Put flour and 1/2 teaspoon salt in a mixing bowl. Drizzle in 1/4 cup oil, egg and 1/4 cup cold water, then mix quickly with hands to make a soft dough. If dough seems dry, add more water, 1 tablespoon at a time. Form dough into a rough rectangle, wrap and refrigerate for 30 minutes.
  • Heat oven to 425 degrees. On a flour-dusted surface, divide dough in half. Roll out one piece to a rectangle approximately 9 by 12 inches (reserve other piece for future use, or to make a second tart).
  • Stir 2 tablespoons olive oil and the garlic together in a small bowl. Put rolled dough on lightly greased baking sheet. Drizzle surface of dough with garlic oil. Scatter onion slices over dough. Arrange tomato slices over dough in one layer without crowding, then season with salt and pepper. Top tomatoes with torn mozzarella slices in one layer. Tuck olives and capers here and there, if using. Drape top of tart with intermittently placed anchovy fillets.
  • Bake for 6 minutes on bottom shelf of oven, then transfer to top shelf and bake for another 6 minutes or until nicely browned. Let cool slightly, then cut into squares. Serve warm or at room temperature.

Yield Makes 1 pie

Number Of Ingredients 9

One 28-oz. can whole peeled tomatoes
2 anchovies
2 garlic cloves
6 tablespoons olive oil
1/4 cup basil leaves
Salt
Pepper
12 ounces fresh mozzarella, grated
Grandma-Style Pizza Dough

Steps:

  • Drain one 28-oz. can whole peeled tomatoes and pulse tomatoes with 2 anchovies, 2 garlic cloves, 6 tablespoons olive oil, and 1/4 cup basil leaves in a food processor or blender until mostly smooth (some texture is okay); season with salt and pepper.
  • Put It All Together:
  • A classic Grandma-just sauce and mozzarella-flips the usual script: Add cheese before sauce. Master this basic pie and you're ready to improvise (see below for ideas).
  • Classic Mozzarella Pie:
  • Place a rack in lower third of oven and preheat to 525° or as high as oven will go.
  • Once Grandma-Style Pizza Dough has risen on baking sheet, top with 12 ounces fresh mozzarella, grated, and dot pie with 1 1/2 cups Fresh Tomato Pizza Sauce. Bake pie until golden brown and crisp on bottom and sides, 20-30 minutes.

Tips:

  • Use Fresh, High-Quality Ingredients: To ensure the best flavor, use the freshest and highest quality ingredients available. Look for ripe, juicy tomatoes, fresh mozzarella cheese, and high-quality anchovies.
  • Slice the Tomatoes Evenly: Slicing the tomatoes evenly will help them cook evenly. If the tomatoes are not sliced evenly, some pieces may be overcooked while others are still raw.
  • Drizzle the Tomatoes with Olive Oil and Season with Salt and Pepper: Drizzling the tomatoes with olive oil and seasoning them with salt and pepper will help to enhance their flavor.
  • Bake the Tomatoes Until They Are Slightly Roasted: Baking the tomatoes until they are slightly roasted will help to concentrate their flavor and bring out their sweetness.
  • Add the Mozzarella Cheese and Anchovies: Once the tomatoes are slightly roasted, add the mozzarella cheese and anchovies. The cheese will melt and become gooey, while the anchovies will add a salty, briny flavor.
  • Return the Dish to the Oven Until the Cheese Is Melted and Bubbling: Return the dish to the oven until the cheese is melted and bubbling. This will take only a few minutes.
  • Serve Fresh and Warm: Serve the dish fresh and warm, garnished with fresh basil or parsley.

Conclusion:

This recipe for fresh mozzarella tomatoes with anchovies is a simple but delicious dish that is perfect for a light lunch or dinner. The combination of sweet, juicy tomatoes, gooey mozzarella cheese, and salty, briny anchovies is irresistible. This dish is also very easy to make, and it can be ready in just under an hour. So next time you're looking for a quick and easy meal, give this recipe a try. You won't be disappointed!
