4 large portobello mushrooms (about 5 inches in diameter), stemmed

  • Prepare the barbecue (medium-high heat).

1/4 teaspoon lemon juice (white balsamic or champagne vinegar okay) or 1/4 teaspoon balsamic vinegar (white balsamic or champagne vinegar okay)
1/2 teaspoon salt, to taste

1 garlic clove, crushed and minced

1 cup uncooked couscous

Quick recipe that can be made with prepared gnocchi and pesto, plus chicken breast and fresh mozzarella. Very easy; so easy, I'm sure it borders on a non-recipe. Anything that needs to be cooked can probably be added at the chicken stage. I did not add any onions or garlic, because the pesto I used already had both, but if your pesto does not, you can add those with the oil as well.

1 lb fusilli

  • Bring 4 quarts water to boil in large pot.

You can make your dough, or purchase uncooked pizza dough from the bakery dept. of your supermarket.This pizza is very rustic, and very similar to true pizza, in Italy.The fresh ingredients are essential to how good this is.

1 (4 ounce) portion pizza dough
1/2 teaspoon extra virgin olive oil
1 large plum tomato, thinly sliced
1 tablespoon sliced fresh basil
4 slices fresh mozzarella cheese (thin slices)
1 slice country ham (optional) or 1 slice smoked ham, cut into thin strips (optional)
1/4 teaspoon pepper

Steps:

  • Preheat oven to 450°F Shape pizza dough ball into 6-8 inch circle on a lightly floured surface.( Circle doesn't have to be perfect) Place dough on a piece of prachment paper. Fold up edges of dough, forming a 1 inch border. Brush oil evenly over dough with a pastry brush, or drizzle evenly over dough.
  • Cover pizza dough circle loosely with plastic wrap, and let rise in warm place, free from drafts, 15 to 20 minutes. Heat pizza stone or heavy baking sheet 10 to 12 minutes in oven. ( I think the pizza stone is much better than the pan).
  • Remove and discard plastic wrap from dough. Layer tomato, and next 3 ingredients evenly. Sprinkle with pepper. Carefully transfer dough on parchment paper to pizza stone.
  • Bake at 450F for 10 minutes or until crust is golden.

ZUCCHINI WITH FRESH TOMATOES AND MOZZARELLA

1 1/2 pounds zucchini
1 1/2 pounds tomatoes
1 pound mozzarella

Balsamic vinegar

Steps:

  • Heat a charcoal or gas grill; the fire should be medium-low and the rack about 4 inches from the heat.
  • Cut 1 1/2 pounds zucchini into 1/2-inch-thick slices.
  • Rub zucchini with olive oil, salt and pepper; grill, turning once, until nicely browned and tender, 6 to 8 minutes.
  • As zucchini cooks, slice 1 1/2 pounds tomatoes and 1 pound mozzarella into 1/4 inch rounds.
  • Toss (or layer) with the zucchini, and drizzle with balsamic vinegar and olive oil; season with salt and pepper.
  • Garnish with basil.

1/2 French baguette, sliced
2 medium tomatoes, sliced
1 1/2 cups shredded mozzarella cheese
italian seasoning
olive oil
balsamic vinegar

Steps:

  • To prepare, slice tomatoes and french bread.
  • Toast the slices of french bread in the toaster.
  • Place the toasted french bread pieces on aluminum foil or baking pan.
  • Put one layer of tomato slices on each piece of french bread (usually 1 1/2 to 2 tomato slices for each piece of toast).
  • Sprinkle mozzarella cheese on top of each piece.
  • Bake in toaster oven until cheese is melted.
  • Take out of oven and drizzle a small amount of olive oil and balsamic vinegar on top.
  • Sprinkle Italian seasoning and salt and pepper to taste, on top.

four ripe medium tomatoes, preferably new jersey beef steaks, chopped
1/2 cup torn fresh basil leaves
1/3 cup extra virgin olive oil
one garlic clove, finely chopped
salt and pepper
1 pound bow ties, farfalle
eight ounces fresh mozzarella, cut into small dice

Steps:

  • 1. in a large pasta serving bowl, mix the tomatoes, basil, oil, garlic, and salt and pepper to taste. Let stand at room temperature up to two hours.
  • 2. Bring at least 4 quarts of salted water to a boil in a large pot. Add the pasta, stir well and cook over high heat, stirring frequently, until the pasta is al dente, tender yet firm to the bite.
  • 3. Drain the pasta and toss it with the sauce. Add the mozzarella and toss again. Serve at once. Serves 4 to 6.
