Steps:
- Combine chopped mint, ginger, and honey in medium bowl. Add boiling water. Let steep 30 minutes. Strain into 4-cup glass measuring cup, pressing on solids to extract liquid. Add lemon juice and enough cold water to measure 4 cups total. (Can be prepared 1 day ahead. Cover and refrigerate.)

Tips:
- Use fresh mint leaves for the best flavor. If you don't have fresh mint, you can use dried mint, but it won't be as flavorful.
- Use freshly squeezed lemon juice for the best flavor. If you don't have fresh lemons, you can use bottled lemon juice, but it won't be as flavorful.
- Use filtered or spring water for the best flavor. If you don't have filtered or spring water, you can use tap water, but it may not taste as good.
- Sweeten the lemonade to taste. You can use sugar, honey, or stevia, depending on your preference.
- Serve the lemonade chilled for the best flavor. You can chill it in the refrigerator for a few hours or overnight.
