Yield Makes about 1 cup

Number Of Ingredients 9

1 cup chopped fresh cilantro
1 cup chopped fresh parsley
1/4 cup chopped seeded fresh red serrano or red jalapeño chilies
1/4 cup water
1/4 cup olive oil
1 1/2 tablespoons minced garlic
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon ground cumin

Steps:

  • Combine all ingredients in processor and blend until very finely chopped. (Can be prepared 1 week ahead. Refrigerate in covered container.)

Tips:

  • Choose the Right Peppers: Select fresh, firm peppers with vibrant color. Look for peppers that are free of blemishes and bruises.
  • Roast the Peppers: Roasting the peppers enhances their flavor and makes them easier to peel and blend. You can roast the peppers in the oven or over an open flame.
  • Remove the Seeds and Stems: Once the peppers are roasted, let them cool slightly before handling. Remove the seeds and stems to reduce the spiciness of the paste.
  • Use a Food Processor or Blender: A food processor or blender is the easiest way to make a smooth and consistent pepper paste. Pulse the peppers until they reach the desired consistency.
  • Add Aromatics and Spices: Enhance the flavor of the pepper paste by adding aromatics like garlic and onions, and spices like cumin and coriander.
  • Adjust the Consistency: The consistency of the pepper paste can be adjusted by adding a small amount of water or oil. If you want a thinner paste, add more liquid. For a thicker paste, add less liquid.
  • Store Properly: Store the pepper paste in an airtight container in the refrigerator for up to 2 weeks. You can also freeze the pepper paste for up to 6 months.

Conclusion:

Fresh hot pepper paste is a versatile condiment that can be used in a variety of dishes. It adds a spicy kick to sandwiches, wraps, and tacos. It can also be used as a marinade for meats or as a dipping sauce for appetizers. With its bold flavor and easy-to-make process, fresh hot pepper paste is a great addition to any kitchen.
