  • Place beans in a large saucepan and cover with water. Bring to a boil. 3 pounds green beans
3 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
2 large onions, sliced thin
2 tablespoons chopped fresh thyme leaves
1/2 tablespoon chopped fresh rosemary leaves
2 tablespoons chopped fresh chives
1/2 cup walnuts, roughly chopped

Steps:

  • Bring a large pot of water to a boil; add a big pinch of salt and the green beans. Cook for about 5 minutes, the beans should still be crisp, they will be cooked more in the oven. Drain them and set aside.
  • Melt the butter and olive oil in a large skillet over medium heat. Add the onions, season with salt and pepper, and cook until the onions caramelize, about 20 to 25 minutes. Add the thyme, rosemary and chives, and cook for another 5 minutes. Add the green beans and walnuts, and stir well. Season, to taste.

4 tablespoons vegetable oil
1/4 cup minced fresh ginger (about 6 inches ginger root, peeled)
4 medium-size garlic cloves, minced

Steps:

  • Bring a large pot of salted water to a boil, and fill a large bowl with ice water. Working in two batches, boil beans until just tender but still crisp and bright green. Start testing after 4 minutes or so, being careful not to overcook. When done, plunge beans into ice water to stop cooking, lift out immediately when cool and drain on towels. (Recipe can be made to this point up to a day in advance and kept refrigerated, wrapped in towels.)
  • When ready to cook, heat 2 tablespoons oil in a wide skillet over high heat. Add half the beans, half the ginger and half the garlic, and cook, stirring and tossing constantly, until beans are heated through and ginger and garlic are softened and aromatic. Sprinkle with salt, and remove to a serving dish. Repeat with remaining oil, beans, ginger and garlic. Serve.

1 teaspoon soy sauce
1 teaspoon freshly grated gingerroot (FRESH only!) or 1 teaspoon freshly grated galangal (FRESH only!)
1 garlic clove, finely minced
3/4 cup walnut halves
1 lb green beans, rinsed and trimmed
2 teaspoons fresh lime juice or 2 teaspoons fresh lemon juice
1 tablespoon olive oil
cilantro leaf (optional)

Steps:

  • Preheat oven to 250 degrees.
  • On a baking sheet spread the canola oil and heat up in the oven. Once the pan is hot, remove from oven and add the soy sauce, fresh ginger, garlic and walnut halves. Stir to coat.

1 pound green beans
2 tablespoons peanut or sesame oil
1 small shallot, finely chopped
3 teaspoons minced garlic
2 teaspoons grated fresh ginger
1/2 medium red chile, like jalapeno, thinly sliced
2 tablespoons soy sauce

Steps:

  • Prepare the scallion garnish: Finely slice the scallions on an angle and drop them into a large bowl with ice and water - this will make the scallion threads curl up nicely so they look like ribbons. Set aside.
  • Wash green beans under cold running water. Cut off the root ends and discard. Bring a large pot of salted water to a boil over medium-high heat. Add the beans and blanch until bright green, about 2 minutes. Shock in ice water then drain in a colander.
