- Preheat the oven to 350 degrees F (175 degrees C). Fill a large bowl with ice and cold water.
- Bring a large pot of lightly salted water to a boil. Add green beans and cook, uncovered, until crisp-tender, about 6 minutes. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain and transfer to a large bowl
- Heat 3 tablespoons butter in a large skillet over medium-high heat. Saute onion in the hot butter until translucent, about 5 minutes. Add mushrooms and garlic; saute until mushrooms are just cooked through, about 5 minutes. Stir into green beans.
- Place remaining 5 tablespoons butter in a 2-quart, microwave-safe bowl. Microwave on high power in 30 second intervals, until melted.

WOK OR SKILLET ASIAN-STYLE FRESH GREEN BEANS
To save some time cook the green beans ahead, place in a zippered plastic bag and refrigerate until ready to use. Make certain to pat the green beans dry using a paper towel before sautéing them. - 1. Trim ends of green beans, and cook in boiling, salted water until crisp and tender. Drain and plunge into ice water. Drain again and set aside. In a large skillet cook bacon till crisp. Drain on a paper towel. Drain off all but 2 Tablespoons of of bacon drippings.

- Bring about 2 inches of water to boil in the bottom of a steamer. Add the beans to the top part, cover and let steam until tender but still firm (about 4-5 minutes). You really want to retain their crispness. Drain and rinse under cold water to stop the cooking process. You could also dunk them into a ice water bath. Drain well and pat dry.
- While the beans cook, whisk together the vinegar, olive oil, mustard and garlic and season to taste with S&P. (If using feta you likely won't want any salt).

- 1. Skillet method: Slice onions, mushrooms and bacon. Drizzle olive oil in skillet (about 1 tbsp) and add bacon and onions. Sautee until bacon is lightly brown. Add thawed beans on top, and mushrooms on top of the bean. Cover with lid and cook over very low heat for about 10-15 min. Stir and remove to bowl.
- 2. Microwave/skillet method: Saute onions and mushrooms in olive oil. If using bacon pcs. cook those a few minutes by themselves before added mushrooms and onions. Cook till onions are tender (and bacon is done). Also you can cook the bacon in the oven on a baking sheet at 425° for about 25 min. then crumb and add to cooked beans. Place beans in med large microwaveable bowl. Add about 1/4 c. of water. Cover with lid or plate and micro for 6-8 minutes. Pour beans from bowl to pot. Saute a few minutes longer to combine flavors.
