Categories     Vegetable     Sauté     Healthy

Yield 6- 8 servings

Number Of Ingredients 7

2 Tbsp. Olive oil
4 potatoes sliced
2 carrots, cut in bite size pieces
1 whole onion, red or yellow, cut in bite size pieces
1 yellow squash, sliced
1 med zucchini, sliced
Salt & Pepper to taste

Steps:

  • Heat oil in electric skillet, set on high to heat. Add vegetables and turn down heat to medium. Cover, and cook until carrots become tender. Stirring occasionally. This can be served with your choice of meats or served alone as a meal.

Tips:

  • Choose fresh, seasonal vegetables: The fresher the vegetables, the more flavor they will have. When possible, buy vegetables from a local farmer's market or grow your own.
  • Use a variety of vegetables: Don't be afraid to mix and match different vegetables. The more variety you have, the more interesting the dish will be.
  • Cook the vegetables properly: Some vegetables, like broccoli and carrots, should be cooked until they are tender but still have a bit of a crunch. Others, like potatoes and onions, can be cooked until they are soft and caramelized.
  • Season the vegetables well: Salt, pepper, and garlic powder are all great ways to add flavor to vegetables. You can also use fresh herbs, citrus zest, or other spices.
  • Serve the vegetables immediately: Vegetables are best when they are served fresh out of the oven or off the stove. If you need to make them ahead of time, reheat them gently before serving.

Conclusion:

Fresh garden medley recipes are a delicious and healthy way to enjoy the bounty of the summer harvest. With a little planning and effort, you can create a dish that is both flavorful and visually appealing. So next time you have a garden full of fresh vegetables, be sure to try one of these recipes.
