FRESH FRUIT SALAD
I was looking for a light meal for brunch and decided to toss every type of fruit I had in the house into a yogurt-based salad for lunch. It went over well with my lunch guest who is a fussy eater. My sister actually asked for seconds. The nice thing about this is you make what you need at the time and don't have to bother with leftovers. However, it does keep well for a few days as long as it is refrigerated. Serve in individual dishes with crackers.

REFRESHING FRESH FRUIT SALAD
This is so simple; it's my favorite fruit salad combination. My grandmother whips this up every holiday and serves it with fresh whipped cream; I like it topped with a sprinkling of granola. So healthy! This is best served about 2 hours after refrigerating. It's good, though, for 2-3 days in the refrigerator, but the banana will turn a little soft. (Cooking time is refrigeration, but you can eat it as soon as you prepare it too)

Steps:
- Peel the orange, taking the white pith with it, like you would an apple.
- Slice into the orange along its sections and place in medium bowl.
- After slicing the orange, you should be left with a slim middle part of the orange; squeeze the juice from this section into the bowl.
- Peel and dice the apple into small pieces; immediately place in bowl and coat with orange pieces and orange juice.
- Peel and dice banana; immediately place in bowl and stir to coat (the orange juice will prevent these 2 fruits from turning brown).
- Slice grapes in half and add to mixture.
- Sprinkle with sugar and stir.
- (**Note,I only add the sugar or Splenda if my orange is a little too tart. If it's a sweet orange, you don't need any sugar).
- **I add blueberries to this if they're in season.

AFTER THE PARTY IS OVER! REFRESHING DETOX FRESH FRUIT SALAD
A wonderful brunch recipe for the morning after or when you need an early boost for a busy day ahead; although this is super healthy and refreshing, I have also served this as the dessert dish for a buffet, BUT with champagne as the liquid instead of orange juice! (Just another idea for dressing this fresh fruit salad up with frills!) This is not only healthy, but it is SO festive and colourful - my photo shows the one I made this Boxing Day (26th December), I usually add kiwi fruit too, but we had run out of them.......oooops! My quantities listed here make enough for 6 to 8 people, but this can be increased as well as reduced to suit personal requirements. I normally serve this with crème fraiche or vanilla yoghurt, but it's also wonderful when served "naked", the salad that is, not me! The fruits I have suggested are rich in vitamins and antioxidants for a quick mental boost, as well as a rapid detox to aid recovery after a heavy night or after indulging in rich food, but please do adapt this to your own seasonal and local produce if you wish.

Steps:
- Place all the peeled and prepared fruit chunks, except the pomegranate seeds, into a large glass serving bowl and pour the orange juice over, mix and if necessary, add more orange juice.
- Scatter the pomegranate seeds over the top and serve with low fat crème fraiche or vanilla yoghurt - or just "naked"!
- (Add champagne for a special festive dessert -- but not if you want to serve this detox style!).
Tips:
- Selecting the Best Fruit: Choose ripe, fresh fruits that are free of blemishes and bruises. A variety of colors and textures will make your salad more visually appealing and flavorful.
- Preparing the Fruit: Wash and dry the fruit thoroughly before cutting. Remove any stems, seeds, or pits. Cut the fruit into bite-sized pieces.
- Enhancing the Flavor: Consider adding a squeeze of lemon or lime juice to brighten the flavors of the fruit. You can also add a drizzle of honey or maple syrup for a touch of sweetness.
- Creating a Colorful Display: Arrange the fruit salad in a clear glass bowl or serving dish. Alternate different colors and types of fruit to create a visually appealing presentation.
- Chilling the Salad: For a refreshing treat, chill the fruit salad in the refrigerator for at least 30 minutes before serving. This will enhance the flavors and make it a perfect side dish or dessert.
Conclusion:
With its vibrant colors, refreshing taste, and versatility, fresh fruit salad is a delightful dish that can be enjoyed for breakfast, lunch, dinner, or as a snack. Experiment with different combinations of fruits and flavors to create a salad that suits your taste preferences. Whether you prefer a simple combination of a few classic fruits or a more elaborate salad with exotic ingredients, a fresh fruit salad is a delicious and healthy way to enjoy the goodness of nature's bounty.
