Honey, fruit and strong cheese is a match made in heaven - serve as a simple starter with crusty bread

Categories     Lunch, Starter

Time 12m

Number Of Ingredients 9

4 tbsp clear honey
1 tsp thyme leaves
1 tbsp cider vinegar
2 tbsp rapeseed oil
2 tbsp hazelnuts , toasted and roughly chopped
1 small fennel bulb , trimmed and finely sliced (use a mandolin if you have one)
2 handfuls rocket leaves
200g stilton , thinly sliced
2 ripe figs

Steps:

  • Put the honey and thyme leaves in a small pan, then gently warm together for 2 mins - the honey shouldn't get hot enough to bubble. Set aside to cool. Make a dressing by whisking together the cider vinegar and rapeseed oil with some seasoning.
  • To serve, gently toss the chopped hazelnuts, fennel and rocket with the dressing. Divide the cheese between 4 plates, add a fig half to each, then a pile of the salad. Finally drizzle the thyme-infused honey over the figs and cheese.

FIG AND HONEY JAM WITH WALNUTS

Fig and Honey Jam with Walnuts image

I recently made a meat and cheese board for my family and wanted to make a jam/preserve with it that we normally wouldn't have. Figs came to mind and, after searching around a little and getting a few ideas, I came up with this. It was such a huge hit that I decided to share it. I hope that everyone enjoys it as much as we did! It will last for up to 30 days if you do not can it.

A delectable dessert that makes full use of fresh, luscious, ripe figs with a sophisticated saffron and honey syrup. This is often on my dessert menu when my figs are in season, and is an easy and yet impressive end to any special meal. HONEY-ROASTED SALTED FIGS

Honey-Roasted Salted Figs image

Dried figs with a salty-sweet coating and clusters of red grapes are a refreshing dessert. Although tiny, each item is abundant in flavor.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Number Of Ingredients 6

1/4 cup extra-virgin olive oil, plus more for baking sheet
1/4 cup honey
10 ounces dried Turkish figs
10 ounces dried Black Mission figs
1/2 teaspoon coarse salt
2 small bunches assorted grapes, such as red and champagne

Steps:

  • Preheat the oven to 400 degrees. Lightly brush a rimmed baking sheet with olive oil. Whisk 1/4 cup extra-virgin olive oil and 1/4 cup honey in a large bowl. Add 10 ounces each of dried Turkish and Black Mission figs; toss to coat.
  • Arrange figs in a single layer on prepared sheet. Sprinkle with 1/2 teaspoon coarse salt. Roast until fragrant and caramelized, 12 to 15 minutes. Immediately loosen figs from sheet with a metal spatula. Let figs cool slightly, loosening again after 5 minutes. Transfer to a platter, and serve with assorted grapes.

Tips:

  • Choose the perfect figs: Look for ripe, plump figs with smooth skin and no bruises. Fresh figs are best enjoyed within a few days of purchase, so use them as soon as possible.
  • Use high-quality Stilton cheese: The flavor of the Stilton cheese is key in this recipe, so choose a good-quality cheese that is ripe but not too pungent.
  • Toast the walnuts: Toasting the walnuts brings out their flavor and makes them more crunchy. You can toast them in a pan on the stovetop or in the oven.
  • Make the honey-drizzle dressing ahead of time: The dressing can be made up to a day in advance, which makes it a great option for busy weeknights. Simply whisk together the honey, olive oil, balsamic vinegar, and salt and pepper.
  • Don't overcrowd the pan when cooking the figs: If you overcrowd the pan, the figs will steam instead of caramelizing. Cook them in batches if necessary.

Conclusion:

This recipe for fresh figs with Stilton and walnuts in a honey-drizzle dressing is a delicious and easy appetizer or side dish. The sweet figs, salty cheese, and crunchy walnuts are a perfect combination, and the honey-drizzle dressing adds a touch of sweetness and acidity. This dish is sure to impress your guests, and it's also a great way to enjoy fresh figs when they're in season.
