Steamed Fresh Green Beans with Garlic Dill Hollandaise Sauce image

Taking a new approach to fresh green beans, steamed with Swanson® Chicken Broth and black pepper, add bacon, and drizzle with a creamy butter-less garlic and dill hollandaise sauce. Makes my mouth water.

5 slices turkey bacon
¼ cup Swanson® Unsalted Chicken Stock
¼ cup heavy whipping cream
1 ½ teaspoons fresh lemon juice
3 cloves garlic, minced
1 teaspoon dried dill weed
6 egg yolks
¼ teaspoon fresh ground black pepper
2 cups Swanson® Chicken Broth
2 pounds fresh whole green beans, trimmed
½ teaspoon fresh ground black pepper

Steps:

  • Place turkey bacon in a skillet over medium to medium-high heat. Cook to desired crispness, turning occasionally, about 6 minutes. Remove from heat; let cool slightly. Chop bacon into small pieces.
  • Mix Swanson® Chicken Stock, cream, lemon juice, minced garlic, and dill in a microwaveable bowl. Microwave on HIGH for 1 minute, 30 seconds.
  • Place water in the bottom of a double boiler; water should not touch the bottom of the top pan. Bring water to a boil. Lightly beat egg yolks in the top of the double boiler. Cook, stirring until thickened and egg yolks are about double in volume, 3 to 5 minutes. Reduce heat to low.
  • Gradually whisk in stock/cream mixture, whisking until completely combined. Mix thoroughly for another minute. Season with 1/4 teaspoon black pepper. Remove from heat and cover to keep sauce warm.
  • Set a steamer basket insert into a large saucepan. Pour in Swanson® Chicken Broth to just below the bottom of the steamer; bring to a boil. Add green beans, season with 1/2 teaspoon black pepper and steam until crisp-tender, about 5 minutes. Discard leftover chicken broth or reserve for another use.
  • Transfer beans to a serving dish; sprinkle with bacon crumbles. Top with hollandaise sauce and serve.

Simply Elegant Salmon in Champagne Sauce With Fresh Dill image

Elegant enough for company, yet quick and easy to prepare! Would be a lovely dinner for New Year's Eve, with a glass of bubbly. Adapted from Delia Smith's recipe.

6 middle-cut skinless salmon fillets (6-7 oz/175-200 g each)
1 cup champagne
1 1/2 tablespoons butter, plus a little extra for greasing
2 medium shallots, finely chopped
1 1/2 tablespoons all-purpose flour
1 cup heavy cream (double cream)
6 teaspoons keta salmon caviar, optional to garnish
3 sprigs fresh dill, to garnish
salt & freshly ground black pepper
1 fresh lemon, cut into 6 wedges

Steps:

  • First of all, smear a little butter over the base of a large frying pan, then arrange the fillets in it.
  • Now slowly pour the Champagne over the salmon (it will foam quite a lot, but not to worry), then bring it to a simmer over a medium heat. Now spoon the Champagne over the top of the fillets before putting the lid on.
  • Gently poach the salmon, covered, for about 8-10 minutes. The tip of a knife inserted into the thickest part will show if it is cooked when you just ease the flesh back.
  • While the salmon is poaching, melt the butter in a medium saucepan and cook the shallots in it over a gentle heat for 5-6 minutes, until softened and golden but not browned.
  • When the salmon is cooked, carefully lift the fillets on to a warmed dish, cover them with foil and keep warm.
  • Next, add the flour to the buttery shallot juices, stir it in and cook for 1-2 minutes more.
  • Now gradually add the salmon poaching liquid to the pan, a little at a time, then blend in the cream, whisking until the sauce is smooth. Let it come to a simmer and cook for 1-2 minutes, then season with salt & pepper to taste.
  • Serve the salmon fillets on warmed plates with a little of the sauce spooned over and a teaspoon of keta (optional) and a sprig of dill on top, along with fresh lemon wedges and hand the rest of the sauce round in a warmed jug.
  • Very nice accompanied with fresh, shelled peas, or a green salad with plenty of cucumber and a lemony dressing.

FISH VERMICELLI WITH FRESH DILL AND PINEAPPLE SAUCE

8 ounces rice vermicelli noodles
1 cup fresh dill, leaves picked from stems
1 cup finely sliced scallions
4 tablespoons chopped roasted peanuts
For the fish marinade
1/2 cup canola oil
2 tablespoons fish sauce (nam pla)
1 teaspoon ground turmeric
For the pineapple sauce
1/2 cup cubed fresh pineapple
2 garlic cloves
1 Thai chile
2 teaspoons fresh lime juice
1 tablespoon sugar
1/2 cup fish sauce (nam pla)

Steps:

  • 1. In a medium-size bowl, mix the marinade ingredients together. Cut the halibut into 1 1/2-inch-long pieces. Add the fish to the marinade and toss well. Set aside for 30 minutes.
  • 2. Bring a large pot of water to a boil. Meanwhile, in a blender, blend the pineapple sauce ingredients until smooth.
  • 3. When the water is boiling, add the vermicelli and stir. Cook until the noodles are soft but not mushy, 1 to 2 minutes. (Or just soak the noodles in a bowl of hot water for 4 to 5 minutes.) Drain well and divide among 4 plates; set aside.
  • 4. Heat a large sauté pan over high heat. When the pan is hot, add half the marinated fish and reduce heat to medium. Cook until the fish starts to brown, 30 seconds to 1 minute. Carefully turn the fish pieces over, then cook for about 20 seconds more. Add half the dill and scallions and sauté for about 20 seconds, or until the scallions are wilted.
  • 5. Divide the cooked fish, scallions, and dill over 2 of the plates of noodles.
  • 6. Repeat the cooking process with the remaining fish, scallions, and dill, then divide them over the remaining two plates.
  • 7. Drizzle 1 to 2 tablespoons of the pineapple sauce over the fish and noodles. Sprinkle with the roasted peanuts and serve immediately. Pass the extra pineapple sauce at the table.

1/2 cup good mayonnaise, such as Hellmann's
1/2 cup sour cream
1/2 cup plain yogurt, such as Stonyfield
2 tablespoons cream cheese, at room temperature
1/2 cup chopped scallions, white and green parts (4 scallions)
1/2 cup minced fresh dill
1/4 cup minced fresh flat-leaf parsley
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
1 cup seeded, grated hothouse cucumber

Steps:

  • Place the mayonnaise, sour cream, yogurt, cream cheese, scallions, dill, parsley, lemon zest, lemon juice, 2 teaspoons salt, and 1 teaspoon pepper in the bowl of a food processor fitted with the steel blade. Puree for a few seconds, until well mixed. Add the cucumber and puree for another few seconds, until combined. Pour into a container and refrigerate for a few hours to allow the flavors to develop.
