FRESH CRANBERRY SAUCE

Fresh Cranberry Sauce image

A great side dish for Thanksgiving dinner. It can be used as filling for cranberry/cream cheese tarts and also makes a great topping on bagels, corn bread, or cheesecake. Pour into a serving dish or jars and cover. The pectin in the cranberries will make the cranberry sauce gel as it cools. I usually use a fork to mix it up which will make it more pliable.

Categories     Lunch

Time 5m

Yield 2-3/4 cups.

Number Of Ingredients 4

1 can (14 ounces) whole-berry cranberry sauce
1 can (11 ounces) mandarin oranges, well drained
1 can (8 ounces) crushed pineapple, well drained
1/4 cup chopped pecans, toasted

Steps:

  • In a small serving bowl, combine the cranberry sauce, oranges and pineapple. Stir in pecans just before serving. Refrigerate leftovers.

Nutrition Facts :

Tips:

  • Fresh is best: Use fresh cranberries for the best flavor and texture. Frozen cranberries can be used, but they will not produce as vibrant a sauce.
  • Zest it up: Mandarin oranges add a bright, citrusy flavor to the sauce. Be sure to zest the oranges before juicing them to get the most flavor.
  • Simmer slowly: Bring the sauce to a simmer over medium heat, then reduce the heat to low and simmer for 15-20 minutes, or until the cranberries have burst and the sauce has thickened.
  • Don't overcook: Overcooked cranberries will become mushy and lose their flavor. Simmer the sauce just until the cranberries have burst.
  • Taste and adjust: Taste the sauce before serving and adjust the sweetness to your liking. You can add more sugar or honey if desired.
  • Serve warm or cold: Cranberry sauce can be served warm or cold. It is delicious on turkey, chicken, pork, or tofu.

Conclusion:

This fresh cranberry sauce with mandarin oranges is a delicious and easy-to-make side dish that is perfect for Thanksgiving, Christmas, or any other special occasion. The bright, citrusy flavor of the oranges pairs perfectly with the tartness of the cranberries, and the sauce is sure to be a hit with everyone at your table. So next time you're looking for a festive and flavorful side dish, give this cranberry sauce a try.
