A fresh alternative to store-bought cranberry sauce. Quick and easy!

1 (12 ounce) bag fresh cranberries
6 tablespoons white sugar
2 tablespoons brandy-based orange liqueur (such as Grand Marnier®)
½ cucumber - peeled, seeded, and diced
2 stalks celery, chopped
4 slices pickled jalapeno pepper, finely chopped

Steps:

  • Place the cranberries into a food processor, and pulse until finely chopped. They should still have some texture. Transfer to a serving bowl, and stir in the sugar, orange liqueur, cucumber, celery and jalapeno. Let sit at room temperature for 15 minutes before serving to blend the flavors.

Last year a friend asked me for a cranberry salsa recipe. Since I had never heard of it but liked the sound of it, I searched the net. My foodie friend Diane had one posted and I used several of her ingredients and I used a combo of several different recipes. I liked the idea of apple in it and the fresh ginger in Diane's recipe...

Number Of Ingredients 15

1 - 12oz bag(s) fresh cranberries, washed, sorted, and shake excess water off
1 lg or 2 small granny smith apples, peeled and cut in chunks
1/2 red bell pepper seeded and cut in chunks
1/2 green bell pepper, seeded and cut in chunks
1 medium red onion, peeled & cut in chunks
1/4 c diced green onions, small
1/4 c fresh chopped cilantro leaves
1/3 - 1/2 c sugar or stevia (i use a combo of both) start with less and add to your taste
2 - 3 medium jalapenos, seeded and cut up..amt depending on the heat you desire
1/2 to 1 c orange or apple juice (i have used both with great results)
juice and zest of 1 lime (add to your taste)
1 inch fresh peeled & grated ginger (approx 1 tbl)
1 - 2 tsp red pepper flakes
salt & pepper to taste
1 - 2 - 8 oz blocks of creamed cheese to serve salsa over

Steps:

  • 1. Wash and prepare all produce. Dry off as much moisture as possible. In food processor bowl pulse cranberries, apple, bell peppers, red onion, and jalapeno to desired consistency. I like mine pretty small. Finely dice green onions and cilantro and grate ginger by hand to retain it's structure.
  • 2. Mix all together in large bowl..adding remaining ingredients. Let marry, covered in fridge for a few hours. Serve over a block of creamed cheese with plain tortilla chips. I like to make apps with Tostito's Scoops, creamed cheese, and salsa on top. Yummm!
  • 3. I have not made cranberry sauce since I started making this salsa. It's more to my family's liking. Try it on a turkey sandwich instead of cranberry sauce. I think you will love it as much as I do.

Tips:

  • Choose fresh, firm cranberries for the best flavor and texture.
  • If you don't have a food processor, you can chop the cranberries and other ingredients by hand.
  • Be careful not to over-process the salsa, or it will become too mushy.
  • Taste the salsa and adjust the seasonings to your liking.
