Categories     appetizer

Yield Serves 4

Number Of Ingredients 15

2 large, ripe tomatoes, peeled, seeded, finely diced, and drained
2 ears sweet corn, shucked and cooked (about 1 1/2 cups kernels)
15 sprigs fresh cilantro, finely chopped (about 1 1/2 tablespoons)
2 tablespoons finely diced onion
1 teaspoon fresh lime juice
3/4 teaspoon ground cumin
1 tablespoon ketchup
3/4 teaspoon salt
2/3 cup broth
1 teaspoon chili powder
1 tablespoon butter
1/2 cup couscous
1 egg, lightly beaten
Vegetable oil for frying
8 ounces turkey sausage or pork sausage, casing removed

Steps:

  • In a medium bowl, combine the tomatoes, corn, half of the cilantro, the onion, lime juice, 1/4 teaspoon of the cumin, the ketchup, and salt. Set aside.
  • Prepare the fritters: In a medium saucepan over medium-high heat, combine the broth, chili powder, butter, and remaining salt. Bring to a boil. Add the couscous in a stream. Stir once. Cover and remove from the heat. Set aside until the couscous is tender, 12 to 15 minutes. Transfer to a medium bowl and combine with the egg.
  • Preheat the oven to 200 degrees F. In a medium skillet over medium-high heat, pour vegetable oil to a depth of 1/2 inch. Heat until a pinch of couscous sizzles instantly. Place the couscous mixture, in 1/3 cup increments, into the skillet. With a spatula, flatten into croquettes 3 to 3 1/2 inches in diameter. Fry until golden brown, 6 to 8 minutes on each side. Transfer to a plate with paper towels to drain. Keep warm in the oven.
  • In another medium skillet over medium heat, cook the sausage, breaking it up with a fork, until thoroughly cooked, 6 to 8 minutes. With the spatula, transfer the meat to plate lined with paper towels to drain. Set aside.
  • Spoon some of the salsa onto 4 individual dinner plates. Set a fritter in the center of each plate. Top with equal portions of sausage and additional salsa. Garnish with the remaining cilantro leaves and serve.

CRAB AND CORN FRITTERS WITH FRESH CORN MAYO

Crab and Corn Fritters with Fresh Corn Mayo image

Categories     Food & Cooking     Appetizers

Yield Makes about 3 dozen

Number Of Ingredients 15

1 tablespoon unsalted butter
Corn kernels cut from 3 ears
2 cups all-purpose flour
1 tablespoon baking powder
2 1/2 teaspoons sugar
1 1/2 teaspoons salt
1/4 teaspoon cayenne pepper
1 cup whole milk
3 large eggs
1 tablespoon hot sauce
1 teaspoon Worcestershire sauce
1 pound fresh jumbo lump crabmeat, picked over for shells and cartilage
Vegetable oil for frying
Coarse sea salt or kosher salt, for serving (optional)
Fresh Corn Mayo, for serving

Steps:

  • Melt the butter in a small saucepan over medium heat. Add the corn and cook, stirring as needed, for about 2 minutes. Remove from the heat.
  • In a medium bowl, sift the flour, baking powder, sugar, salt, and cayenne together.
  • In a small bowl, whisk the milk, eggs, hot sauce, and Worcestershire together to combine. Make a well in the dry ingredients and pour the wet into it. Combine gently with a whisk, then, with a rubber spatula, gently fold in the corn and crabmeat, taking care to not break up the lumps of crab.
  • Add enough oil to come halfway up the side of a deep-sided cast iron skillet or Dutch oven or to the fill line of an electric fryer and preheat to 325 degrees F.
  • Working in batches of 6 to 8 and using a 2-tablespoon scoop (like a melon baller or ice cream scoop), carefully drop the fritter batter into the oil. You don't want the fritters browning too fast, so don't allow the temperature of the oil to go higher than 325 degrees F or to drop below 300 degrees F; adjust the heat under the pot as needed. Cover the pot with a splatter screen or the vented top if using an electric fryer to protect yourself, as individual corn kernels will pop and fly if they make contact with the hot oil. As the fritters float to the top, roll them over in the hot oil to brown them evenly. When they are golden on all sides, which will take 5 to 6 minutes per batch, use tongs, a slotted spoon, or a spider to transfer them to paper towels to drain. Season with salt immediately so the salt sticks to the fritters, if desired. Repeat until you use up all the batter.
  • Serve hot with the Fresh Corn Mayo.

THE BEST FRESH CORN FRITTERS

The Best Fresh Corn Fritters image

These are delightful explosions of taste, can be served with charred tomato salsa as an appie, as a side dish or even maple syrup for breakfast. I am including the charred tomato salsa but they are great all on their own too.

Provided by MarraMamba

Categories     Sauces

Time 1h

Yield 26 small fritters

Number Of Ingredients 17

4 1/2 ounces all-purpose flour
1/4 cup stone-ground yellow cornmeal
2 teaspoons baking powder
1 teaspoon sugar
1/2 teaspoon table salt, more for sprinkling
1/2 cup whole milk
1/4 cup sour cream
2 large eggs
1 cup fresh corn kernels, coarsely chopped (from about 1 large or 2 small ears of corn)
1 -1 1/2 cup vegetable oil
1 lb fresh ripe tomatoes (about 3 medium)
1 unpeeled garlic clove
1/2 medium chipotle from a can chipotle chile in adobo
kosher salt
1 tablespoon extra virgin olive oil
2 tablespoons finely chopped fresh cilantro
1 1/2 teaspoons fresh lime juice

Steps:

  • Salsa:.
  • Position an oven rack about 4 inches below the broiler and heat the broiler on high. Arrange the tomatoes and garlic on a rimmed baking sheet and broil until the tomatoes are charred on one side, about 5 minutes. Turn the tomatoes and garlic and char on the second side, about 2 minutes longer. Let cool. Peel the tomatoes and garlic, discarding the skins and saving any juices that are released.
  • In a blender, briefly purée the tomatoes and their juices, the garlic, chipotle chile, and 1/2 teaspoons salt-it needn't be perfectly smooth.
  • In a medium, heavy-based saucepan, heat the oil over medium-high heat. When a drop of the puréed tomato mixture sizzles when added, pour in the remaining purée. Bring to a boil, stirring frequently. Adjust the heat to an active simmer and continue to cook, stirring frequently, until reduced to a scant cup and thickened to a sauce consistency, 8 to 12 minutes. Cool to room temperature. Stir in the cilantro and the lime juice. Season to taste with salt. Serve at room temperature.
  • Fritters:.
  • In a medium bowl, stir the flour, cornmeal, baking powder, sugar, and salt. In a small bowl, whisk the milk, sour cream, and eggs. With a rubber spatula, gently stir the egg mixture into the flour mixture until just blended. Stir in the corn. Let sit for 10 to 15 minutes. Meanwhile, position a rack in the center of the oven and heat the oven to 200°F.
  • Pour the oil into a small, heavy frying pan, preferably cast iron, to a depth of 1/2 inch. Heat over medium heat until it's hot enough that a small dollop of batter sizzles when added. With a spring-lever miniature ice cream scoop or a tablespoon, scoop up a ball of the batter and gently release it into the hot oil. Add three or four more balls of batter to the hot oil, taking care not to crowd the pan. Reduce the heat to medium low so that the fritters cook gently. When golden brown on the bottom and barely cooked around the top edge, after 1 to 2 minutes, use a slotted spatula to turn the fritters and cook until golden on the bottom, 1 to 2 minutes longer.
  • Transfer the fritters to a wire rack set over a baking sheet, sprinkle generously with salt, and keep warm in the oven. Continue to cook the remaining batter in small batches, adding more oil as needed to maintain the 1/2-inch depth. Serve right away with the salsa.

JACQUE'S FRESH CORN FRITTERS

Jacque's Fresh Corn Fritters image

My wife cannot eat the whole kernels of corn and I love corn. Pureeing the batter seemed to be a logical approach to solving this problem. I am type 2 diabetic so the use of liquid egg helped my situation. The flavor from grilling the corn adds a flavor that cannot be duplicated and turned these ordinary fritters into great fritters.

Provided by Jacque

Categories     Side Dish     Vegetables     Corn

Time 2h46m

Yield 6

Number Of Ingredients 10

6 ears fresh corn
1 shallot, minced
¼ cup liquid egg substitute
¼ cup fat-free half-and-half, divided
3 tablespoons cornmeal
3 tablespoons all-purpose flour
½ teaspoon sea salt
½ teaspoon baking powder
1 pinch cayenne pepper
1 cup oil for frying

Steps:

  • Remove silk from the top of the ears of corn and trim so that there is an even layer of husk around the ears. Tie the husk in 1 or 2 places. Soak in a large bowl of water for 2 to 3 hours.
  • Preheat grill for medium heat and lightly oil the grate. Cook corn in the husk, turning every 10 minutes, until husks look blackened, 15 to 20 minutes.
  • Cool corn until easily handled, about 5 minutes. Pull off husks and any remaining husks. Cut kernels from the ears of corn and place in a bowl.
  • Scrape any pulp remaining on the cobs into a blender. Add shallot, liquid egg substitute, 3 tablespoons half-and-half, cornmeal, flour, salt, baking powder, and cayenne pepper; blend until smooth. Thin batter with remaining 1 tablespoon half-and-half if needed.
  • Preheat oven to 200 degrees F (95 degrees C).
  • Heat oil in a large nonstick skillet over medium-high heat until shimmering. Drop 6 tablespoonfuls of batter into the hot oil; cook until golden brown, about 3 minutes per side. Transfer fritters to an ovenproof plate lined with paper towels and keep warm in the oven. Repeat with remaining batter.

Provided by Chef John

Time 16m

Yield 6

Number Of Ingredients 12

½ cup mayonnaise
2 teaspoons ground dried chipotle pepper
1 lime, juiced
1 large egg white
¼ cup ice water
½ teaspoon kosher salt
¼ cup cornstarch
¼ cup self-rising flour
2 ears fresh sweet white corn, kernels removed from cob
1 cup vegetable oil for frying, or as needed
1 ½ cups flaked fresh Dungeness crab meat

Steps:

  • Whisk mayonnaise, chipotle powder, and lime juice together in a mixing bowl. Cover with plastic wrap and refrigerate until needed for serving.
  • Whisk egg white, ice water, and salt together in a large mixing bowl until mixture is light and foamy, 1 or 2 minutes. Add cornstarch and flour; whisk together until thoroughly mixed. Batter should resemble a thin pancake batter. Stir in corn.
  • Heat 1/2 inch vegetable oil to 350 degrees F (175 degrees C) in a seasoned cast iron skillet. Spoon about 2 large spoonfuls of batter into oil for each fritter. FRESH CORN FRITTERS WITH CHEDDAR CHEESE

Fresh Corn Fritters with Cheddar Cheese image

A delicious summer dish highlighting fresh corn. Adapted from Alexandra Stafford's version of Deborah Madison's "Local Flavors"

Provided by Marilena Leavitt

Categories     Side dish

Time 35m

Yield 16 fritters

Number Of Ingredients 11

2 large eggs, beaten lightly
3 scallions, white and green parts, very thinly sliced
¼ cup fresh cilantro, chopped
4 oz. cup white, extra sharp cheddar cheese, grated
3 medium ears of corn, shucked
¼ cup all-purpose flour
¼ tsp. sea salt
--- freshly cracked black pepper, to taste
--- pinch of red pepper flakes (optional)
--- olive oil (or vegetable oil) for frying
--- sour cream for serving

Steps:

  • Gather all the ingredients. Place a clean kitchen towel over a medium bowl. With a sharp knife, remove the kernels from the cob. Reverse your knife and scrape any remaining pulp from the cob using the dull side of the knife (you should have about 1½ cups of kernels). Empty the kernels into the bowl.
  • Add the rest of the ingredients and mix well. Season with salt and pepper and set aside. If you are not ready to cook the fritters, cover the mixture and refrigerate it until ready to use; just remember to stir well before frying.
  • When you are ready to cook the fritters, check the batter by using a spoon to lift a heaping spoonful from the mixture. The batter on the spoon should just hold together, without being watery. If it is too wet, adjust with some extra flour.
  • Heat the oil over medium-high temperature in a large, no-stick, heavy-bottomed skillet. When the oil begins to shimmer, carefully drop one heaping tablespoon of the mixture into the skillet. Reduce the heat to medium. Gently flatten the patty with a spatula. After about a minute or two, check the underside to ensure that it is lightly browned. Flip the fritter, and cook for one or two minutes more on the other side, or, until it is evenly a golden brown color. Transfer the fritter to a plate lined with a paper towel and let it cool briefly. Taste. If the fritter needs more seasoning, add more to the batter. If the fritter was too wet and did not stay together at all, add a bit more flour. If the fritter is too thick, add an additional ½ beaten egg to the batter. Mix again very well.
  • Fry up the rest of the fritters in the same way as the tester fritter, adding a thin layer of oil to the pan with each batch.
  • Serve the fritters with a dollop of sour cream and, if you wish, a wedge of fresh lime.

Categories     Corn

Yield 12 Fritters

Number Of Ingredients 6

2 1/2 cups fresh corn
2 eggs separated
3 tbls rice flour
1/4 tsp finely ground pepper
1/2 tsp dill weed
1 tbls oil

Steps:

  • 1. Add four, pepper and dill weed to the fresh corn and mix well 2. Beat yolks until light yellow; blend with corn kernal mixture. 3. Whip the egg whites until stiff but not dry, fold into the corn mixture. 4. Cook like pancakes on a well-oiled griddle until light brown and fluffy, turning once.

Tips:

  • Use fresh corn. Fresh corn has a sweeter flavor and more moisture than frozen or canned corn.
  • Remove the corn kernels from the cob just before cooking. This will help prevent the kernels from drying out.
  • Use a large skillet or griddle. This will give the fritters plenty of room to cook without overcrowding.
  • Heat the oil over medium heat. If the oil is too hot, the fritters will brown too quickly and not cook through.
  • Cook the fritters for 2-3 minutes per side, or until golden brown. Do not overcook the fritters, or they will become dry and tough.
  • Serve the fritters hot with your favorite dipping sauce.

Conclusion:
