Time 15m

Number Of Ingredients 4

1 pound (16 ounces) fresh or frozen fruit (for the photos, I used fresh strawberries, peaches, and frozen blueberries)
2 tablespoons honey or maple syrup
Dash of salt
See optional flavoring ideas given above recipe

Steps:

  • To prepare the fruit: If you're using fresh strawberries or peaches, cut them into thin slices. If you're using small berries like blueberries or raspberries, you can use them whole. If you're using frozen fruit, no need to defrost or slice them before using.
  • In a medium saucepan, combine your fruit of choice, sweetener of choice and dash of salt. Bring the mixture to a boil over medium-high heat, stirring occasionally. This will take about 5 minutes for fresh fruit or 10 minutes for frozen fruit.
  • Once boiling, reduce the heat to medium. If you're using chunky fruit or prefer a smoother consistency, mash the fruit with a potato masher or serving fork until it reaches your desired consistency. Continue simmering, stirring often, until the compote has condensed to about half of its original volume, about 5 minutes.
  • Remove the compote from the heat. I'm generally satisfied with my compote at this point, but if the compote isn't sweet enough for your liking, you can stir in a more sweetener, to taste. If you'd like it to be more smooth, mash it some more.
  • Let the compote cool for a few minutes before serving. Allow leftover compote to cool completely before covering and refrigerating for up to 10 days.

Make granita no more than a day ahead of time for best texture. If it freezes solid, it can be revived by pulsing in a food processor. This recipe was inspired by a trip I took with my husband to Italy. -Jennifer Beckman, Falls Church, Virginia

CITRUS-VANILLA COMPOTE

Citrus-Vanilla Compote image

Top our Ricotta Cheesecake with this compote.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Yield Makes 2 cups

Number Of Ingredients 6

1 red or pink grapefruit (do not peel), preferably organic, washed well
1 navel orange (do not peel), preferably organic, washed well
1/4 cup water, plus more for pan
1/4 cup sugar
1/2 vanilla bean, split and scraped, pod reserved
Pinch of salt

Steps:

  • Cut peels from grapefruit and orange. Cut pith from peels, and slice into very thin strips. Slice fruit along membranes to release segments into a bowl. Squeeze juice from membranes into bowl; discard membranes. Pour cup juice through a fine sieve into a small bowl.
  • Bring a medium saucepan of water to a boil. Cook citrus peels for 1 minute; drain. Bring cup water, the sugar, and vanilla seeds and pod to a boil in a clean medium saucepan over medium-high heat, stirring until sugar dissolves. Reduce heat to low. Add reserved juice and peels and the salt; cook for 2 minutes. Let cool completely.
  • Discard vanilla pod. Toss syrup with reserved fruit.

Tips:

  • Choose the right citrus fruits: Use a variety of citrus fruits for a more complex flavor. Some good options include oranges, grapefruits, lemons, limes, and tangerines.
  • Use fresh citrus fruits: Fresh citrus fruits will give you the best flavor. If you can't find fresh citrus fruits, you can use frozen or canned citrus fruits, but the flavor will not be as good.
  • Segment the citrus fruits: Segmenting the citrus fruits will make them easier to eat and will help the compote to cook evenly. To segment a citrus fruit, cut off the top and bottom of the fruit, then score the fruit around the circumference. Use your fingers to pull the segments apart.
  • Add sugar to taste: The amount of sugar you add to the compote will depend on your personal preference. If you like a sweeter compote, add more sugar. If you prefer a tarter compote, add less sugar.
  • Cook the compote until it thickens: The compote should be thick enough to coat the back of a spoon. This will take about 15-20 minutes.
  • Let the compote cool before serving: The compote will thicken as it cools. Let it cool for at least 30 minutes before serving.

Conclusion:

Citrus compote is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is also a great way to use up leftover citrus fruits. With a few simple ingredients and a little bit of time, you can make a delicious citrus compote that the whole family will enjoy.
