Kosher salt and freshly ground black pepper
3 cups cilantro, coarsely chopped
1/2 to 1 fresh hot green chile, such as bird's-eye, Indian long, or serrano, coarsely chopped
1 1/2 tablespoons fresh lemon juice
Freshly ground pepper

2 tablespoons dry white wine
1 tablespoon plus 1 teaspoon low-sodium soy sauce
1 tablespoon cornstarch
2 large garlic cloves, pressed
1 large egg white
1 pound boneless skinless chicken breasts, well trimmed, cut lengthwise into 1/2-inch-wide strips
