FRESH APPLE NUT CAKE

Fresh Apple Nut Cake image

This is a moist and delicious cake. No spices to take away from the fresh apple taste. It stays moist but just doesn't last very long at my house. This recipe comes from my mother. She clipped it out of a newspaper a long time ago. It's been a favorite ever since.

3 cups sifted plain flour
3 cups diced peeled apples
1 cup chopped pecans
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon salt

Tips:

  • Choose the right apples. For this recipe, a firm, tart apple like Granny Smith or Honeycrisp works best.

  • Don't overbake the cake. The cake is done when a toothpick inserted into the center comes out clean.
  • Let the cake cool completely before frosting it. This will help the frosting set properly.
