Time 3h25m

Yield 10 to 12 servings

Number Of Ingredients 16

2 tablespoons unsalted butter, softened
3 cups plus 2 tablespoons all-purpose flour
2 cups granulated sugar
1 1/2 cups vegetable oil
3 large eggs
1/2 cup orange juice
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
2 to 2 1/2 cups peeled, cored and finely diced sweet apples
1 cup walnuts, finely chopped
3/4 cup granulated sugar
6 tablespoons (3/4 stick) unsalted butter
1/3 cup buttermilk
1/2 teaspoon baking soda

Steps:

  • For the cake: Preheat the oven to 325 degrees F. Mix together the softened butter with 2 tablespoons of the flour to make a paste. In a 10-inch Bundt pan, paint on the flour and butter paste with a pastry brush until the pan is well coated.
  • Using an electric mixer, beat the sugar, oil and eggs until smooth. Add the orange juice and vanilla extract and mix well. In another bowl, sift together the baking soda, cinnamon, salt and remaining 3 cups flour. Add the flour mixture to the sugar mixture and continue to beat well. Stir in the apples and walnuts.
  • Pour the batter into the pan and bake until a toothpick inserted in the cake comes out clean, about 1 hour 30 minutes. Remove the cake from the oven and let it cool in the pan for 15 minutes. Turn the cake out onto a cake plate.
  • For the glaze: Combine the sugar, butter, buttermilk and baking soda in a large saucepan and bring to a boil. Boil the mixture until it thickens slightly and begins to turn a light brown, 5 to 10 minutes. Remove from the heat.
  • Using a toothpick, punch 15 to 20 holes in the top of the cake and pour the glaze over the cake. Let the cake set and cool before serving. Store the cake in an airtight cake carrier in the refrigerator for up to 2 weeks.

After testing many apple cake recipes with fresh apples, this old-fashioned cake is moist, dense and down-home delicious. Even better, it 's quick to fix and, served warm with whipped cream or a dollop of frozen custard, one of my family's very favorite recipes for decades. -Sherry Ashenfelter, Waterville, Ohio

PAULA DEEN'S FRESH APPLE CAKE

Paula Deen's Fresh Apple Cake image

Paula Deen's recipe for fresh apple cake is better than my grandma's--- but don't let her know that! I like this even better than apple pie.

Provided by DeeCooks

Categories     Dessert

Time 1h45m

Yield 10-12 serving(s)

Number Of Ingredients 14

3 tablespoons sugar
3 cups sugar
3 teaspoons cinnamon
3 cups flour
1 teaspoon baking soda
3/4 teaspoon salt
1/4 teaspoon nutmeg
1 1/2 cups vegetable oil
3 eggs
3 cups chopped apples (about 3 apples)
2 teaspoons vanilla extract
1 cup chopped pecans
1/2 cup raisins
prepared frosting, melted (from a can)

Steps:

  • Preheat oven to 325°F Grease 10" tube pan, combine 3 Tablespoons sugar with 1 teaspoon cinnamon, coat pan with sugar mixture.
  • Mix flour, soda, salt, nutmeg, and cinnamon; set aside. Beat oil and sugar until blended. Beat in eggs, one at a time, and then stir in apples and vanilla. Add flour mixture until blended; stir in pecans and raisins.
  • Transfer to pan and then drop and shake the pan to release bubbles.
  • Bake 1 1/2 hours - 1 3/4 hours until toothpick comes out clean. Cool on rack 15 minutes, remove from pan and glaze.

Tips:

  • Choose the Right Apples: Select firm, tart apples like Granny Smith or Honeycrisp for a balanced flavor. Softer apples like Red Delicious or McIntosh can also be used, but they may yield a sweeter cake.
  • Use Fresh Ingredients: Freshly squeezed lemon juice and pure vanilla extract enhance the cake's flavor. Avoid using store-bought lemon juice or imitation vanilla.
  • Cream Butter and Sugar Thoroughly: This step incorporates air into the mixture, resulting in a lighter, fluffier cake. Cream the butter and sugar until light and fluffy, about 2 minutes.
  • Don't Overmix the Batter: Overmixing can develop the gluten in the flour, resulting in a tough, dense cake. Mix the batter just until the ingredients are combined.
  • Bake in a Preheated Oven: Preheat the oven to the specified temperature before baking the cake. This ensures even baking and prevents the cake from sinking.
  • Test for Doneness: Insert a toothpick into the center of the cake. If it comes out clean, the cake is done. If it comes out with batter or crumbs attached, bake for a few more minutes.
  • Let the Cake Cool Completely: Allow the cake to cool completely before frosting or serving. This helps the cake set properly and prevents it from falling apart.

Conclusion:

This classic Southern apple cake recipe yields a moist, flavorful cake with a tender crumb and a sweet-tart apple filling. The combination of fresh apples, warm spices, and a buttery streusel topping makes this cake a perfect fall treat. Whether you enjoy it for breakfast, dessert, or a midday snack, this cake is sure to satisfy your sweet tooth.
