FRESH APPLE COOKIES/BARS

Fresh Apple Cookies/Bars image

I have had this recipe in my file for a number of years, I don't know the origin. My family loves the flavor but the cookies are hard to make and handle so I turned it into bars. The bars are much easier to make and handle. We most often omit the glaze because it can be too sweet; although powdered sugar sprinkled on the cooled bars would dress them up for guests.

This is my Grandma Anderson's famous Apple Bar Recipe. My father's favorite! He even has me make them when I visit and freezes them to eat through out the year!

FRESH APPLE BARS

Fresh Apple bars image

I came up with this recipe by changing a fresh apple cake recipe that I had into bars. Autumn is in the air and this is the perfect recipe to bring it in. The bars are so moist and the combination of Fiji and Granny Smith apples make it so delicious. This is my new favorite recipe for fall celebrations. I hope you enjoy it.

Time 1h25m

Number Of Ingredients 13

2 c fuji apples, peeled and diced small
2 c granny smith apples, peeled and diced small
1 c vegetable oil
2 c sugar
2 1/2 c all purpose flour
1 tsp salt
1 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp vanilla
1 c black walnut pieces
2 eggs, well beaten
1 tsp baking soda
1 tsp baking powder

Steps:

  • 1. In a large bowl mix the oil and sugar with an electric mixer.
  • 2. Add the eggs and mix.
  • 3. Sift together the dry ingredients and add to the wet ingredients. Mix together.
  • 4. Gently fold on the apples, vanilla and walnuts by hand.
  • 5. Bake in a 9x13 pan that has been sprayed with Bakers Joy or grease and flour. Bake for 50 to 55 minutes at 325. The cake is done when a toothpick is inserted and comes out clean. Completely cool the cake before it is covered. You can cut into bars once it is cooled.

Tips:

  • Choose Crisp Apples: Use firm, crisp apples like Granny Smith or Honeycrisp for the best texture.
  • Prepare Apples Properly: Peel, core, and thinly slice the apples for even baking and a tender-crisp texture.
  • Don't Overmix the Batter: Overmixing the batter can result in a tough texture. Mix until just combined.
  • Chill the Dough: Chilling the dough before baking helps prevent spreading and ensures the layers stay distinct.
  • Bake Until Golden: Bake the bars until the top is golden brown and a toothpick inserted in the center comes out clean.
  • Cool Completely: Allow the bars to cool completely before cutting and serving. This helps them set and hold their shape.

Conclusion:

These fresh apple bars are a delightful treat that combines the flavors of sweet apples, a buttery crust, and a crumbly topping. With a few simple tips and tricks, you can easily make this delicious dessert at home. Whether served warm with a scoop of vanilla ice cream or enjoyed as a grab-and-go snack, these apple bars are sure to be a hit. So gather your ingredients, preheat your oven, and get ready to indulge in this classic dessert.
