Yield 9 serving(s)

Number Of Ingredients 10

9 slices Texas toast thick bread or 1 French baguette, sliced in 1-inch thick pieces
6 eggs
1 1/2 cups coconut milk
2 tablespoons orange zest (the amount from one orange)
3 tablespoons Grand Marnier
1/2 cup butter (1 stick)
1 cup brown sugar
1 tablespoon cinnamon
3 bananas, sliced (ripe)
1 g nonstick cooking spray

Steps:

  • Whisk together the eggs, coconut milk, orange zest and Grand Marnier in a bowl.
  • Combine the butter, brown sugar and cinnamon in a sauce pan and cook over medium heat, stirring until it becomes a smooth sauce; mix in bananas.
  • Spray one 9"x13" pan plus one 8"x8" pan with light cooking spray and line the pans with sliced bread; pour the egg mixture over the top, then the banana mixture.
  • Chill covered overnight and then, the next morning, bake uncovered at 350 degrees for 30 minutes.

Tips:

  • Choose ripe bananas: The riper the bananas, the sweeter and more flavorful your filling will be.
  • Use fresh orange juice: Fresh orange juice will give your filling a brighter, more vibrant flavor than store-bought juice. The zest of the orange will also add a lovely citrus kick.
  • Don't overcook the filling: The filling should be thick and bubbly, but not so thick that it's difficult to spread. If it's too thick, you can add a little more orange juice or milk.
  • Use a good quality bread: The bread you use for your French toast will make a big difference in the final product. Look for a thick, hearty bread that will hold up well to the filling.
  • Cook the French toast over medium heat: Cooking the French toast over medium heat will help it to cook evenly and prevent it from burning.
  • Serve the French toast immediately: French toast is best served immediately after it's cooked. If you need to keep it warm for a few minutes, you can place it in a warm oven.

Conclusion:

This French toast with banana-orange filling is a delicious and easy-to-make breakfast or brunch dish. The combination of sweet bananas, tangy orange, and fluffy French toast is sure to please everyone at the table. With a few simple tips, you can make sure that your French toast is perfect every time. So next time you're looking for a special breakfast or brunch treat, give this recipe a try!
