CARAMEL OVERNIGHT FRENCH TOAST CASSEROLE

Caramel Overnight French Toast Casserole image

EASY, soft, tender, and decadent French toast casserole that's coated in caramel sauce!! Assemble it the night before and wake up to an amazing breakfast or brunch that everyone will ADORE!!

Provided by Averie Sunshine

Categories     Bread, Rolls, Muffins & Breakfast

Time 1h35m

Number Of Ingredients 11

1/4 stick unsalted butter, melted
1 cup light brown sugar, packed
8 large eggs
1 1/2 cups milk (I prefer 2% or whole)
1 to 2 tablespoons vanilla extract
2 teaspoons cinnamon
1 teaspoon ground ginger
1/2 to 1 teaspoon kosher salt, or to taste
1 pound French bread, diced in 1 to 1 1/2-inch cubes (I used day old)
caramel or salted caramel sauce, optional for serving
maple syrup, optional for serving

Steps:

  • Spray a 9x13-inch casserole dish with cooking spray; set aside.
  • To a medium bowl, add the melted butter, brown sugar, and stir to combine. Mixture will have the consistency of wet sand. Scatter this mixture in the bottom of the prepared pan. You will not have complete coverage; set pan aside.
  • To a large bowl, add the eggs, and lightly beat to break the yolks and combine.
  • Add the milk, vanilla, cinnamon, ginger, salt, and whisk to combine.
  • Add the bread to the bowl and toss well, but lightly, with a spatula to evenly coat the bread in the egg-milk mixture.
  • Turn bread out into the prepared pan, cover pan, and place it in the refrigerator for at least 1 hour, or up to 12 hours overnight.
  • Preheat oven to 350F and remove pan from the fridge while oven is preheating. Bake for about 25 to 30 minutes or until the caramel sauce underneath is lightly bubbling and the top of the bread is slightly crusted over and lightly browned.
  • Immediately after you take the casserole dish out of the oven, place a very large serving platter over the casserole dish and invert it so the casserole 'plops' out onto the serving platter. Use caution since the casserole dish is hot and heavy.
  • Using a spatula, scrape any caramel sauce from the baking dish onto the French toast casserole.
  • Optionally, if desired, lightly drizzle extra caramel or salted caramel sauce over the top, and/or lightly drizzle maple syrup, and serve immediately.
  • Recipe is best warm and fresh.

Categories     brunch     Christmas     Easter     Thanksgiving     baking     breakfast     brunch     comfort food     eggs     main dish

Time 1h10m

Yield 8 servings

Number Of Ingredients 14

Butter or nonstick spray
1 loaf French bread, about 18" long
8 large eggs
1 c. whole milk
1 c. heavy cream
1/4 c. light brown sugar
2 tbsp. granulated sugar
1 tsp. cinnamon
1 tbsp. vanilla extract
1 1/2 c. pecans
1 stick butter
1 1/2 c. packed light brown sugar
1/2 c. light corn syrup
1/3 c. maple syrup

Steps:

  • Preheat the oven to 350 degrees.
  • For the french toast: Grease a 9-by-13-inch baking dish with butter or nonstick spray. Cut the bread into 16 slices, about 1-inch thick.
  • In a large bowl, mix together the eggs, milk, cream, sugars, cinnamon and vanilla. Dip slices of bread, four at a time, in the egg mixture. Let each slice rest in the mixture for 1 minute per side (2 minutes total). Once soaked, place the slices in the baking dish, shingling them slightly. Continue until all of the bread has been soaked. Pour any remaining egg mixture over top of the bread and let rest while you make the topping.
  • For the topping: Roughly chop the pecans, leaving some whole. Combine the butter, brown sugar, corn syrup and maple syrup. Once the sugar is dissolved, remove from the heat and stir in the pecans. Place spoonfuls of the mixture all over the top of the bread. Cover and bake for 20 minutes. Uncover and continue baking for 25-30 more minutes, until the egg custard is set and the topping is golden brown. Let rest for 10 minutes before serving.
  • Cut into squares and serve with a drizzle of syrup from the bottom of the pan.

FRENCH TOAST CASSEROLE WITH CARAMEL-PECAN TOPPING

French Toast Casserole With Caramel-Pecan Topping image

Sinfully delicious! Found this recipe in my America's Test Kitchen's Family Cookbook. Prepare the casserole the night before and add the topping just before baking. Great way to use up your leftover homemade bread. As you can see this is one of those 'splurge' recipes . . . . do not make substitutes! Time indicated includes soaking. This recipe can easily be cut in half to serve four!!

Tips:

  • Use stale bread for a better texture. Stale bread will absorb the custard more evenly, resulting in a more evenly cooked and flavorful casserole.
  • Don't overcrowd the casserole dish. If you have too much bread, it won't cook evenly and the casserole will be soggy.
  • Bake the casserole until the custard is set and the top is golden brown. This will ensure that the casserole is cooked through and has a delicious caramelized crust.
  • Serve the casserole warm with your favorite toppings. Some popular options include maple syrup, butter, whipped cream, and fresh berries.

Conclusion:

French toast casserole is a delicious and easy-to-make breakfast or brunch dish that is perfect for a crowd. With its combination of soft, custardy bread, sweet caramel pecan topping, and endless topping possibilities, this casserole is sure to be a hit with everyone at your table. So next time you're looking for a special breakfast or brunch dish, give French toast casserole a try. You won't be disappointed!
