1 tablespoon butter
1 tablespoon olive oil
5 large sweet onions, sliced
2 cans (14-1/2 ounces each) reduced-sodium beef broth
1-2/3 cups water
1-1/4 cups apple cider or juice
1 bay leaf
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper
7 slices French bread (1/2 inch thick)
3/4 cup grated reduced-fat Swiss cheese
1/4 cup grated Parmesan cheese

Steps:

  • In a Dutch oven or large kettle, melt butter. Add olive oil and onions. Cover and cook over low heat until onions are soft, about 30 minutes, stirring occasionally. Stir in the beef broth, water, cider or juice, bay leaf, thyme, salt and pepper. Bring to a boil; reduce heat. Cover and simmer for 20 minutes. Adapted a couple french onion soups to create an original recipe. Friends and family often request me to make this soup. It's a huge hit everywhere I take it. It's super simple but super delicious. Often recipes list a wine and say that you can substitute another wine if you don't have the one listed. For this recipe, however, the Riesling wine is KEY to it's flavor. I strongly suggest sticking with it for this recipe.

3 -3 1/2 lbs onions (3 large)
0.667 (749 5/8 ml) bottle riesling wine
6 (12 ounce) cans beef broth
1/2 cup butter or 1/2 cup margarine
3 tablespoons Worcestershire sauce
2 tablespoons garlic
2 tablespoons paprika
2 bay leaves
2/3 cup flour
salt or pepper
French bread
cheddar cheese (to top if desired)

Steps:

  • Peel onions and slice 1/8 inch thick.
  • Melt butter in a large pot. Add onions and garlic; saute, uncovered, over low heat, stirring occasionally, until onions are soft.
