Time 15m

Yield 4 servings

Number Of Ingredients 10

8 skinless, boneless fillets of flounder, about 1 1/2 pounds
Salt to taste if desired
Freshly ground pepper to taste
1 egg
2 tablespoons water
1/4 cup flour
2 or more tablespoons corn, peanut or vegetable oil
3 tablespoons butter
1 tablespoon freshly squeezed lemon juice
1 tablespoon finely chopped parsley

Steps:

  • Place the fillets on a flat surface and sprinkle with salt and pepper.
  • Break the egg into a shallow wide dish and add salt, pepper and water. Beat well to blend.
  • Spoon the flour onto a flat dish.
  • Dip the fillets in the flour. Coat well on all sides, but shake off excess flour.
  • Dip the fillets in the egg mixture to coat well on all sides. Drain off excess egg mixture.
  • Heat enough oil in a skillet to coat the bottom lightly. Add a few pieces of fish at one time in a single layer without crowding. Let cook about 1 1/2 minutes or until golden brown on one side. Turn the pieces carefully and cook on the second side about one minute or until golden brown. Carefully transfer the pieces to a warm serving platter.
  • Continue cooking the fish a few pieces at a time, adding more oil as necessary.
  • Wipe the skillet and add the butter. Cook until the butter is melted and starts to brown. Add the lemon juice. Pour the butter over the fish. Sprinkle with parsley and serve.

FRENCH-STYLE FLOUNDER

Yield 2 servings

Number Of Ingredients 5

1/2 pound flounder or any other thin, fresh white fish filet
1 handful grape or cherry tomatoes - organic if possible
1 handful olives - I used two types of french cured olives with pits, without vinegar
good quality olive oil
sea salt and pepper, or I used a blend of sea salt with french herbs that I like

Steps:

  • I used an oven-safe multi-clad saute pan, about 12 inches across, and it worked perfectly. I'm sure a sheet pan would work as well. 1. rinse the fish and pat dry with paper towels 2. heat the oven to 350/375 3. pour a little olive oil in the pan 4. dust both sides of the fish with the sea salt/pepper/herbs if you have them 5. slice cherry tomatoes in half, drop them in 6. drop in olives, pits intact 7. dribble olive oil and a sprinkling of salt over the tomatoes 8. place in the oven until done to your liking - 15-20 minutes. It's best when it's just cooked through and very tender, but I accidentally left it in a bit longer and it was still delicious!

Tips:

  • Choose the freshest flounder you can find. Look for fish with bright, clear eyes and firm, moist flesh. Avoid any fish that has a slimy or dull appearance.
  • Use a sharp knife to fillet the flounder. This will help you get clean, even fillets that will cook evenly.
  • Season the fillets liberally with salt and pepper before cooking. This will help to enhance the flavor of the fish.
  • Cook the fillets over medium heat until they are opaque throughout. Do not overcook the fish, as this will make it tough and dry.
  • Serve the flounder immediately with your favorite sides. Some popular options include roasted vegetables, mashed potatoes, or a simple green salad.

Conclusion:

French-style flounder is a delicious and easy-to-make dish that is perfect for any occasion. With its delicate flavor and flaky texture, flounder is a versatile fish that can be cooked in a variety of ways. Whether you are pan-frying, baking, or grilling the fish, be sure to follow the tips above to ensure that you get the best results. So next time you are looking for a quick and easy weeknight meal, give French-style flounder a try. You won't be disappointed!
