Time 8h15m

Yield 4 serving(s)

Number Of Ingredients 9

4 large vidalia onions or 4 large sweet onions, very thinly sliced
2 (1/4-1/2 cup) ounces unsalted butter
3 cups beef stock
1 cup dry white wine
1/4 cup medium-dry sherry
1 teaspoon reduced-sodium Worcestershire sauce
1 clove garlic, minced
4 slices French bread, buttered
1/2-3/4 cup romano cheese or 1/2-3/4 cup parmesan cheese, shredded

Steps:

  • Using a large frying pan, slowly sauté the onions in butter until limp and glazed.
  • Transfer to crock-pot.
  • Add beef stock, white wine, sherry, Worcestershire and garlic.
  • Cover and cook on low for 6 to 8 hours.
  • Place French bread on a baking sheet.
  • Sprinkle generously with cheese.
  • Place under preheated broiler until lightly toasted.
  • To serve, ladle soup into bowl.
  • Float a slice of toasted French bread on top of each bowl.

Tips:

  • Use a variety of onions. Yellow onions are the most common, but you can also use white or red onions. Sweet onions, like Vidalia or Walla Walla, can also be used to add a touch of sweetness to the soup.
  • Caramelize the onions slowly. This is the key to getting a rich, flavorful broth. Cook the onions over medium-low heat, stirring often, until they are golden brown and slightly caramelized.
  • Use a good quality beef broth. This will make a big difference in the flavor of the soup. You can also use chicken broth or vegetable broth, but beef broth is the traditional choice.
  • Add a splash of white wine. This will help to deglaze the pan and add a touch of acidity to the soup.
  • Use a variety of cheeses. Gruyère and Swiss are the most common cheeses used in French onion soup, but you can also use Parmesan, Fontina, or Cheddar. A blend of cheeses will give the soup a more complex flavor.
  • Serve the soup with a baguette. This is the traditional way to serve French onion soup. The baguette can be used to soak up the flavorful broth.

Conclusion:

French onion soup is a classic dish that is perfect for a cold winter day. It is easy to make and can be customized to your own taste. With a few simple tips, you can make a delicious French onion soup that your family and friends will love.
