FRENCH ONION RICE (RICE COOKER)
I adapted this from a bag of Publix supermarket brand Extra Long Grain rice. I love it because it has 4 ingredients but has so much flavor. It's wonderful to use to sop up broth or gravy from entrees...

Steps:
- Wash the cup of rice thoroughly - five times should do it to get the water clear. Don't skip this step! (Note: use a regular English measuring cup, not the plastic cup that comes with your rice cooker).
- Put the rice and the soups in the rice cooker. Float the butter on top. Close the cooker. If using a fuzzy logic cooker press the regular rice menu option and start, or just press ON if using a kettle style cooker. It should take anywhere from 55 minutes to an hour to complete.

Steps:
- 1. Combine first 7 ingredients into a 1-1/2 quart baking dish or 9 X 9 inch baking dish. Cut butter into slices and place on top of rice mixture.
- 2. Place on lid, or cover tightly with foil and bake at 350 degrees for 1 hour.
- 3. Remove from oven and stir. Put Into serving bowl.
Tips:
- Use high-quality ingredients: The better the quality of your ingredients, the better your French onion rice will be. Use good-quality rice, flavorful onions, and a tasty broth.
- Caramelize the onions slowly: This is the key to getting that deep, rich flavor in your rice. Cook the onions over low heat for at least 30 minutes, or until they are golden brown and caramelized.
- Use a good quality broth: The broth is what will give your rice its flavor, so make sure you use a good one. You can use chicken broth, beef broth, or vegetable broth, depending on your preference.
- Don't overcook the rice: Rice should be cooked until it is tender but still has a slight bite to it. Overcooked rice will be mushy and unpleasant.
- Serve immediately: French onion rice is best served hot and fresh out of the pot. It can be garnished with chopped parsley, grated Parmesan cheese, or a dollop of sour cream.
Conclusion:
French onion rice is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover rice. With its rich, caramelized onion flavor and creamy texture, French onion rice is sure to be a hit with everyone at your table.
