1 small onion, sliced
1 teaspoon thyme leaves
Kosher salt

4 slices (1/2-inch-thick) rye bread
1 tablespoon unsalted butter or olive oil, melted
1 tablespoon whole-grain mustard
2 ounces Gruyère cheese, grated
2 slices roast beef

Steps:

  • Heat olive oil in a medium skillet over medium heat. Add onion, season with 1/4 teaspoon each salt and pepper, and cook, covered, stirring occasionally, about 5 - 7 minutes. 2 tsp oil
1 tsp sugar
2 Tbsp water
1 tsp beef consume concentrate, i use better than bullion
2 c grated gruyere cheese, lightly packed
4 slice bread
2 tsp butter

  • 1. Add oil, onion, and sugar to skillet.
  • 2. Cook over low to med low heat until onion begins to caramelize. Stir frequently. Approximately 20 minutes.
  • 3. Once onion begins to caramelize, add beef concentrate and water. Cook until water evaporates and remove from skillet.
  • 4. Butter bread and place two pieces butter side down in skillet.
  • 5. Spread half of the cheese on the bread.
  • 6. Top with half of the onions.
  • 7. Add the rest of the cheese and top with the other two pieces of buttered bread.
  • 8. Grill on medium to medium low until golden brown on one side.
  • 9. Flip and grill until other side is golden brown.
