1 yellow onion, halved
1 large sprig thyme
2 cloves garlic, peeled
1 bay leaf
3 tablespoons extra-virgin olive oil

1/2 teaspoon ground cumin
1/2 red onion, peeled and finely chopped
1 red bell pepper, seeded and finely diced

  • Place lentils in a medium saucepan and cover with tepid water. Set aside to soak for 30 minutes. Drain the lentils and return them to the saucepan.
