FRENCH PEAS

Peas came in late this year. Not enough to freeze like I always do so instead I tried this simple, tasty treat because I love lettuce, peas, and with a bit of butter. The new scallions that I pulled up from the earth, the fresh lettuce, snipped, and the peas just make such a treat to devour and enjoy the accomplishment of these garden treats.

Tips:

  • Choose the freshest peas possible. Fresh peas have a sweeter flavor and are more tender than older peas.
  • Shell the peas just before cooking. Shelling the peas too early can cause them to lose their flavor and sweetness.
  • Cook the peas briefly. Overcooking can make the peas tough and mushy. Aim to cook the peas for just a few minutes, or until they are tender but still have a slight crunch.
  • Use a variety of herbs and spices to flavor the peas. Some good options include mint, basil, thyme, rosemary, garlic, and onion.
  • Serve the peas immediately. Peas are best enjoyed fresh out of the pot.

Conclusion:

French garden sweet peas are a delicious and versatile vegetable that can be enjoyed in a variety of dishes. They are a good source of vitamins, minerals, and fiber. Follow these tips to cook French garden sweet peas perfectly.
