They had the best fry sauce ever and this is my souped up version that I started selling on my hotel bar menu. While some folks think the secret ingredient is vinegar, they are only half right. Pickle juice is the real secret. If you think about what goes on a burger, then drips on to your fries and tastes so darn good, it makes more sense then plain old vinegar. But I felt if I was gonna put it on a bar menu, I needed to make it my own. Oh, please, what ever you do, use mayo, not miracle whip. Besides the fact that miracle whip is a crime against humanity, and just plain nasty, the end product wont be the same.

FRENCH'S TANGY RANCH CHICKEN (BAKED OR STIR-FRY)

I found this in the coupon section of the Sunday paper. If you love mustard and ranch, this is for you! The brown sugar adds a sweet little kick. Our kids can't get enough of it, even when we serve it with veggies and rice as a "stir-fry"! I've included the instructions on how to make baked chicken breast. Stir-fry instructions are included below the full breast instructions. I've made it both ways and it's fantastic! (I've also used fat-free, light and full fat ranch and Splenda brown sugar I couldn't tell the difference.)

2/3 cup light ranch dressing
1/3 cup yellow mustard
3 tablespoons light brown sugar, packed
6 boneless skinless chicken breasts

Steps:

  • Mix ranch, mustard and brown sugar. Reserve 1/2 c of sauce.
  • With the reserved 1/2 c sauce, heat in a saucepan over Medium heat, stirring slowly, but constantly until it starts to get bubbly. Remove from heat. (This wasn't on the French's site but I always do it to get the brown sugar to blend into the recipe a little better. Use your own judgment.)
  • Coat chicken with remaining, uncooked sauce in a 3 qt baking dish.
  • Bake chicken at 350 for 30 minutes or until juices are no longer pink. Serve with cooked sauce.
  • STIR FRY INSTRUCTIONS:.
  • Mix the sauce ingredients the same but do not heat them.
  • Dice 4 chicken breasts and cook in olive oil over medium heat until no longer pink.
  • Add the sauce and heat until bubbly.
  • Serve over already cooked veggies and rice. (You may hold the sauce in pan over lowest heat setting on your stove while making the veggies and rice, just make sure you stir it occasionally.).

1 lemon
2 fresh rosemary sprigs, cut in half
1/2 cup extra-virgin olive oil
2 tablespoons unsalted butter
1 bunch scallions, thinly sliced (white, light green and dark green parts kept separate)
4 cloves garlic, minced
Kosher salt and freshly ground black pepper
4 cups low-sodium chicken broth
1 pound frozen shoestring-style French fries (about 6 cups), thawed
1/2 baguette, sliced in half lengthwise
1/3 cup sour cream

Steps:

  • Set the oven to broil with a rack set about 4 inches from the heat source.
  • Peel the zest away from the lemon in long strips, avoiding the white pith. Place the lemon zest, rosemary sprigs and oil in a small saucepan over medium-low heat and heat until the oil just comes to a simmer, about 10 minutes. Turn off the heat and allow to sit at room temperature while you prepare the soup.
  • Melt the butter over medium heat in a large saucepan. Add the white and light green parts of the scallions (about 1/2 cup) and the garlic. Cook until softened, stirring constantly, 3 to 5 minutes. Add the chicken broth, 2 cups water and the French fries, bring to a boil and then reduce to a simmer. Simmer uncovered until the potatoes soften and start to break apart in the broth, about 10 minutes.
  • Meanwhile, strain the rosemary and lemon strips from the oil. Juice the lemon and whisk into the strained oil. Season with salt and pepper. Brush some of the oil onto the halved baguette, place on a baking sheet and broil until lightly golden brown, about 3 minutes.
  • Once the potatoes are fully softened, use an immersion blender to puree the soup until completely smooth. Season with additional salt if needed.
  • To serve, ladle the soup into bowls. Top with a dollop of sour cream. Drizzle with some of the remaining rosemary-lemon oil and garnish with the dark scallion greens. Cut the baguette into smaller pieces and serve alongside the soup.

1 ½ cups plain full-fat greek yogurt
¼ cup fresh parsley, roughly chopped
1 tablespoon fresh dill, chopped, plus more for garnish
2 cloves garlic, minced
1 teaspoon kosher salt
2 teaspoons lemon juice
4 cups vegetable oil, for frying
cold water, for soaking
2 cups ice
2 tablespoons lemon juice, divided
3 medium russet potatoes
1 package McCormick® Zesty Spice Blend
½ cup chickpeas, drained and rinses
½ cup cucumber, diced
1 cup romaine lettuce, chopped
1 plum tomato, diced
¼ cup red onion, diced
½ cup feta cheese
2 tablespoons fresh dill, roughly chopped

Steps:

  • Make the yogurt sauce: In a medium bowl, mix together the yogurt, parsley, dill, garlic, salt, and lemon juice. Cover and refrigerate until ready to use, up to 1 week.
  • In a large, heavy-bottomed pot, heat 2-3 inches (5-7.5 cm) of vegetable oil over medium-low heat until the temperature reaches 325°F (170°C).
  • Make the fries: Fill a large bowl with cold water, the ice, and 1 tablespoon of lemon juice.
  • Peel the potatoes and slice into ¼-inch (½ cm) thick strips about 3 inches long. Transfer the potato slices to the cold water as you go. Rinse the potatoes under more cold water in the bowl until the water runs clear, rinsing off any excess starch. Add the remaining tablespoon of lemon juice and chill in the refrigerator for 30 minutes.
  • Line 2 baking sheets with thick paper, such as brown paper grocery bags.
  • Remove the potatoes from the fridge and drain, then dry completely with a clean kitchen towel.
  • Working in batches, cook the potatoes in the hot oil for 6-8 minutes, or until they're soft and light golden in color. Remove the fries from the oil using a wire mesh skimmer and transfer to the prepared baking sheets to drain. Let stand at room temperature for 15-20 minutes.
  • Increase the oil temperature to 375°F (190°C).
  • Working in batches, return the fries to the hot oil and cook for another 2-3 minutes, or until golden brown and crispy. Drain on clean paper-lined baking sheets. Sprinkle generously with the zesty seasoning
  • To assemble, spread a layer of fries on a platter and top with some of the yogurt sauce, the chickpeas, cucumbers, lettuce, tomato, red onion, and feta. Top with more yogurt sauce. Sprinkle with dill.

3 teaspoons honey
3 teaspoons vinegar
1/4 teaspoon soya sauce

  • Sprinkle cornstarch on the raw french fries.
  • Toss to coat.
  • Heat oil in a wok/frypan.
  • Fry the cornstarch coated french fries till nice and crisp.

1 1/2 teaspoons paprika
1 pound strip steak (3/4- to 1-inch thick)
Kosher salt and freshly ground black pepper
3 tablespoons olive oil
1 tablespoon whole-grain mustard
2 1/2 tablespoons cider vinegar
2 teaspoons soy sauce
2 teaspoons Worcestershire sauce
8 ounces baby arugula (about 12 cups)

Steps:

  • Preheat the oven to 425 degrees F.
  • Toss the fries with 1 teaspoon of the paprika. Lay out in a single layer on a baking sheet and bake until crispy, about 30 minutes.
  • Sprinkle the steak with 1 teaspoon salt and 1/2 teaspoon pepper. Heat 1/2 tablespoon of the oil in a large skillet over medium-high heat until very hot. This is a recipe my husband created when we were out of all season salt, now when frying up tator tots or french fries we only use this seasoning mix!! Since we don't have a deep fryer, we usually pan fry our tator tots and then toss them with this seasoning. They taste awesome!! We use sea salt so that the sodium isn't as high. If you choose to use regular salt you may need to adjust the amount of salt added to get the right taste. Also tastes great on hashbrowns or diced potatoes!!

1 c whole milk
3 eggs, beaten
2 Tbsp light brown sugar

16 skewers or separated chopsticks

1 pkg crinkle cut french fries, thawed & cut into 1"+ pieces

1 c chopped celery
1 c ripe olives, cut up
1 c spanish olives, cut up
1 c dill pickle relish

dash(es) mustard
dash(es) hot sauce
dash(es) salt, can omit due to salt in olives

1 1/2 lb ground beef (i think you could use pork or turkey if you prefer.)
1/2 medium onion, chopped
1/2 medium green pepper, chopped
1 Tbsp worcestershire sauce
salt and pepper to taste
1 bag(s) frozen mixed vegetables or your choice
1 lb frozen french fries
1 can(s) cream of chicken soup
1/2 can(s) water
4 oz velveeta or american cheese

Steps:

  • 1. Brown ground meat in a large frying pan. Drain off any grease if needed.
  • 2. Add onions and pepper to meat and continue cooking until translucent. Salt and pepper to taste and add worcestershire sauce.
  • 3. Place cooked meat in a large greased casserole.
  • 4. Top with vegetables and then french fries.
  • 5. Mix soup and water. Stir until smooth. Add cheese and cook on stove top or microwave until cheese is melted and sauce is smooth.
  • 6. Pour sauce over casserole. Do not stir.
  • 7. Bake casserole, covered, in a 400 degree oven for 15 minutes. Reduce heat and bake another 20 minutes.
  • 8. Remove cover and bake another 10 minutes or so until browned and bubbly.
