1/4 cup chopped fresh cilantro leaves
3 tablespoons extra virgin olive oil, divided
2 tablespoons freshly squeezed lime juice
1 tablespoon lime zest
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 pounds boneless, skinless chicken thighs

Steps:

  • In a medium bowl, combine cilantro, 2 tablespoons olive oil, lime juice, lime zest, chili powder, cumin, salt and pepper. In a gallon size Ziploc bag or large bowl, combine chicken and cilantro mixture; marinate for at least 2 hours to overnight, turning the bag occasionally. Drain the chicken from the marinade. Heat remaining 1 tablespoon olive oil in a cast iron grill pan over medium high heat.* Working in batches, add chicken to the grill pan in a single layer and cook until golden brown and cooked through, reaching an internal temperature of 165 degrees F, about 4-5 minutes per side. Serve immediately.

1 1/2 teaspoons corn oil
2 lbs chicken thighs, skin and fat removed (about 8)
3/4 lb onion, peeled and thinly sliced (resulting to 4 cups)
8 cloves garlic, peeled and thinly sliced
1/2 cup dry white wine
2 tablespoons finely chopped fresh cilantro (coriander or Chinese parsley)
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Heat oil on large nonstick frying pan.
  • Add thighs in one layer and saute them over medium to high heat for 4 minutes on each side, until nicely browned.
  • Remove the chicken to a platter.
  • Add the onions to the drippings in the skillet.
  • Saute for 1 minute.
  • Stir in the garlic, wine, and cilantro stems and saute for 10 seconds longer.
  • Return chicken to frying pan, add salt and pepper, and bring surrounding liquid to a boil.

1 cup all-purpose flour, for dredging
1 rounded teaspoon dried thyme
Kosher salt and freshly ground pepper
8 skinless chicken thighs, bone-in
2 tablespoons EVOO
2 tablespoons butter
8 ounces button mushrooms, quartered
2 large shallots, finely chopped
1 carrot, finely chopped
1/2 teaspoon sugar
1/2 cup dry white wine
1/4 cup chopped fresh tarragon
1/3 cup pitted picholine or other buttery black olives, finely chopped
One 28-ounce can chopped San Marzano tomatoes
1 baguette, for serving

Steps:

  • Put the flour in a shallow dish and season with the thyme, salt and pepper. Dredge the chicken in the flour, shaking off the excess. Heat the EVOO in a Dutch oven over medium-high heat. Add the chicken and cook until browned and crisp on both sides. Remove to a plate. Melt the butter in the pot over medium heat. Add the mushrooms and cook until lightly browned. Add the shallots, carrots and sugar, and season with salt and pepper. Cook for a couple of minutes to soften. Deglaze with the wine, stirring and scraping up any browned bits from the bottom of the pot with a wooden spoon. Stir in the tarragon, olives and tomatoes and bring to a simmer. Return the chicken to the pot and cook, partially covered, for 30 minutes, stirring occasionally. Preheat the oven to 350 degrees F. Slice the baguette on an angle and toast in the oven. Divide the chicken and sauce among plates and serve with the baguette. Cook's Note: The stewed chicken can be covered and refrigerated for a make-ahead meal. Reheat over medium heat.

All-star cilantro lime chicken recipe! Chicken thighs, prepared Mediterranean-style with a special spice mixture and cooked to tender perfection in a tasty garlic, lime and cilantro sauce. You can cook this in the oven (my preference) or in the slow cooker (see notes for instructions). Bone-in, skin-on chicken thighs are my preference here, but you can use boneless thighs or even chicken breasts if you like. (Note that cooking time will change, and I've listed all the details in the post.)

8 chicken thighs, (bone in, skin on)
Extra Virgin Olive Oil
6 garlic cloves, (roughly chopped)
1 cup dry white wine
2 limes, (juice of)
2 cups chicken broth
1 bunch cilantro, (stems removed, chopped; more for garnish)
1 to 1 1/2 tsp seasoned salt like this one
1 tsp sweet Spanish paprika,
1 tsp black pepper
1 tbsp garlic powder
1/2 tsp ground nutmeg

Steps:

  • Preheat your oven to 375 degrees F.
  • In a small bowl, mix the spices. Pat the chicken thighs dry, and season each thigh on both sides with the spice mix. Be sure to season underneath the skin as well. Let the chicken thighs sit in room temperature for about 15 minutes.
  • Brown the chicken. When ready, heat 1-2 tablespoons of olive oil in a cast iron skillet (with a lid). Brown the chicken thighs deeply on both sides in the heated oil.   • Cover the skillet with the lid and transfer to the heated oven for 45 minutes or until the chicken is fully cooked through.
