FRENCH CABBAGE SOUP FROM DOOR COUNTY, WI

French Cabbage Soup from Door County, WI image

This recipe is a popular soup served at the Summer Kitchen near Ephraim, WI. It is thick and delicious. I've modified it somewhat by adding the thyme and pepper for even more flavor. It freezes very well. For Culinary Quest participants - it's typical of the hearty soups served throughout central Europe.

RONNIE'S CABBAGE SOUP

Ronnie's Cabbage Soup image

Ronnie's was a great Jewish type deli restaurant on Highway 50 on the east side of Orlando. I have fond memories of it from the early 80's on. Sometime in the 90's, I think, it closed. They used to have stainless bowls on the tables with pickles, sauerkraut, pickled beets, etc. I don't live in the Orlando area any more, but my mom does and she cut this recipe out of the Orlando Sentinel for me from a column they have called "Thought You'd Never Ask" where they get recipes from local restaurants. I haven't made this myself yet, but I thought I'd put it here for safekeeping. I will also add this Test Kitchen note: "We used only 1/2 cup sugar preparing this recipe. That amount could even be cut back to 2 tablespoons."

Time 3h

Yield 8 cups, 8 serving(s)

Number Of Ingredients 10

8 beef short ribs
3 medium onions, chopped
1 small head cabbage, cut into pieces
4 medium tomatoes, chopped
6 cups water
1 cup sugar (or to taste, see notes)
4 teaspoons garlic powder
4 tablespoons lemon juice
1/4 teaspoon salt
4 ounces tomato ketchup

Steps:

  • In a large pot, sear ribs. When well seared, remove from pot.
  • Add onions, cabbage, and tomatoes to drippings in pot. Cook vegetables until soft.
  • Put meat back into pot and add remaining ingredients. Simmer over medium heat for 2 1/2 hours.

Tips:

  • To make the soup ahead of time, cook it according to the recipe and then let it cool completely. Store the soup in an airtight container in the refrigerator for up to 3 days. When you're ready to serve, reheat the soup over medium heat until warmed through.
  • If you don't have any fresh cabbage on hand, you can use 1 pound of frozen or thawed cabbage instead.
  • Feel free to add other vegetables to the soup, such as diced carrots, celery, or potatoes.
  • If you like a thicker soup, you can add a cornstarch slurry to the soup just before serving. To make a cornstarch slurry, whisk together 1 tablespoon of cornstarch and 1 tablespoon of water until smooth. Stir the cornstarch slurry into the soup and cook over medium heat until the soup has thickened to your desired consistency.
  • Serve the soup with a side of crusty bread or crackers.

French cabbage soup is a hearty and flavorful soup that is perfect for a cold winter day. It is also a very affordable and easy-to-make soup.
