FRENCH GREEN BEANS SAUTéED WITH MUSHROOMS AND ALMONDS

French Green Beans Sautéed With Mushrooms and Almonds image

I created this Asian-inspired dish last night. It is permissible for phase one of the South Beach Diet and we LOVED it. I used frozen french beans from Trader Joe's, but fresh beans would be wonderful! Amounts are highly approximated; I didn't measure when making this, but this is pretty similar to what I did. (If using fresh beans, you'd probably want to blanch them in boiling water and then plunge in ice water, and *then* add to the pan.)

Time 35m

Yield 2 serving(s)

Number Of Ingredients 6

1 tablespoon olive oil
2 -3 garlic cloves
6 large button mushrooms, sliced
1/2-3/4 cup whole almond (more or less to taste and to fit your dieting goals)
1/2 lb frozen French-cut green beans (like those found at Trader Joe's but any would work, including fresh, also, you may want to add more)
soy sauce, to taste

Steps:

  • Heat oil over medium heat.
  • Sauté garlic until soft, being careful not to let it burn.
  • Add sliced mushrooms and sauté until they look fairly cooked and shiny (about 5 minutes).
  • Add almonds and sauté for a couple more minutes.
  • Finally, add frozen green beans and splash of soy sauce.
  • Stir frequently until beans are just cooked and, of course, no longer frozen.
  • If not on the south beach diet or watching sugar intake, you could add oyster sauce or other Asian condiment to the mixture.

VEGAN GREEN BEAN CASSEROLE

Vegan Green Bean Casserole image

The classic Thanksgiving side dish becomes instantly more flavorful with the use of fresh green beans, shallots and mushrooms. This recipe is also vegan, owing to a quick, creamy sauce made with non-dairy milk and thickened with flour. You can save yourself the trouble of deep-frying onions by using store-bought French fried onions. They're usually vegan, but be sure to double check the ingredient label to be sure.

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 11

Olive oil, for greasing the baking dish
1 tablespoon plus 2 teaspoons kosher salt
1 1/2 pounds green beans, trimmed
2 tablespoons vegan butter
1 pound sliced white button or baby bella mushrooms
2 small or 1 large shallot, chopped
2 garlic cloves, minced
2 tablespoons unbleached, all-purpose flour
2 cups unsweetened soy, oat or almond milk
Black pepper, to taste
1 1/2 cups store-bought fried onions

Steps:

  • Heat the oven to 350 degrees and oil a 3-quart baking dish.
  • Fill a large pot with water. Add 1 tablespoon salt to the water and bring to a boil. Add the green beans and boil for 4 minutes (or 3 minutes if you are using French beans). Drain the green beans and rinse them under cold running water. Give them a shake to remove excess water, then cut them into 2-inch pieces. Transfer the cut green beans to the baking dish.
  • Heat the butter in a 12-inch skillet over medium heat. Add the mushrooms and shallots. Cook for 5 minutes, or until the mushrooms have released their juices and are reduced in size. Stir frequently to prevent the shallots from burning. Add the garlic and cook the mushrooms for another 3 minutes, stirring as you go.
  • Place the flour in a small bowl and add 1/4 cup of the non-dairy milk. Whisk together to create a slurry.
  • Pour the remaining 1 3/4 cups non-dairy milk into the skillet with the mushrooms. Stir in the slurry, 2 teaspoons kosher salt and the black pepper. Bring the liquid to a simmer and reduce the heat to low. Cook, stirring occasionally, for 4 to 5 minutes, or until the sauce has thickened enough to coat the back of a spoon.
  • Pour the mushroom sauce over the green beans and give it a gentle stir to coat. Top with the fried onions. Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes, or until the onions turn a deep golden brown and the sauce is bubbling. Allow the casserole to cool for 15 minutes before serving.

Tips:

  • Select tender beans: Choose young and tender green beans for the best flavor and texture. Avoid beans that are thick, wrinkled, or have brown spots.
  • Cook beans properly: To retain their crispness and vibrant color, cook green beans briefly. Overcooking can make them mushy and bland.
  • Use fresh, high-quality ingredients: The better the quality of your ingredients, the better your dish will taste. Look for fresh, organic produce and high-quality spices and herbs.
  • Don't overcrowd the pan: When cooking green beans, avoid overcrowding the pan. This will prevent them from cooking evenly and becoming soggy.
  • Season to taste: Don't be afraid to adjust the seasonings in the recipes to your own taste. Add more salt, pepper, or herbs as desired.

Conclusion:

With their bright green color, crisp texture, and sweet flavor, French baby beans are a delicious and versatile addition to any meal. Whether you enjoy them as a simple side dish, toss them into a salad, or add them to a stir-fry, these beans are sure to please. And with so many easy and flavorful recipes to choose from, you'll never get bored of this nutritious and delicious vegetable.
