1 1/4 lbs granny smith apples, peeled, cored and sliced
1 1/4 lbs golden delicious apples, peeled, cored and sliced (To make a 9 inch apple pie, use 6-8 medium apples. )
1 teaspoon baking soda
1 cup all-purpose flour
2 2/3 cups apple cider, reduced (see * below)
1 -1 1/2 cup golden raisin, seedless raisins. soak in

  • TIP:( Use your favorite baking apples a combination of Granny Smiths (for their tart flavor and crisp texture) and Cortlands (for their sweetness and softer texture) is nice. Northern Spies or Ginger Golds are wonderful, if you can get them. ).
  • For the filling*: Bring the apple cider to a boil in a saucepan over medium-high heat about 20 minutes, until reduced to about 2/3 cup.
  • For Crust:.
  • Combine the flour, salt and sugar, cinnamon in a food processor. Add the butter and shortening, and pulse until mixture forms coarse crumbs. Add 2 tablespoons of ice water to the flour mixture. With the machine running, add additional water, a tablespoon at a time, until clumps form. Mold the dough into two balls, shape into disks and wrap in plastic wrap. Refrigerate for 30 minutes.
  • On a lightly floured surface, roll out the remaining dough into a 13-inch round. Roll it up on the rolling pin and unroll it on the top of the pie. Trim the edges, leaving a 1-inch rim of dough. Fold that under and crimp the edges with your fingers or a fork. Slit the top crust with a knife a few times to let the steam escape. Or you can use a refigerated pie crust mix from the store.
  • This pie crust is a lot easier to roll after it has chilled for two hours. It then absorbs less flour when rolled. The lemon juice will tenderize the gluten while baking--there is no need for any special precaution in rolling. The large circle of dough can be easily manipulated into the pan by first folding it in four, and then unfolding right in the pan, where the pan provides support. Your recipe directs the filling to be cooked and added to the rolled dough without saying anything about any cooling time. Using a hot filling makes the pastry get soggy in the oven.

2 tablespoons cornstarch
1 ½ cups apple juice
1 (9 inch) prebaked deep dish pie shell
1 cup all-purpose flour
1 cup white sugar
1 cup unsalted butter, cut into pieces

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).

PIE BOTTOM CRUST INGREDIENTS
1 c all purpose flour
1/3 c crisco
1 Tbsp heaping crisco
1 dash(es) salt
cold water
PIE FILLING INGREDIENTS
6 c granny smith apples sliced
3/4 c sugar
1/4 c all purpose flour
1/2 tsp nutmeg
1/2 tsp cinnamon
1 dash(es) salt
CRUMB TOPPING INGREDIENTS
1 stick butter hard
1 c flour
1/2 c brown sugar

Steps:

  • 1. Bottom pie crust directions. I am going to make this as complete as I can for everyone that has never made their own pie crust.
  • 2. Take flour and crisco and put it in a medium bowl.
  • 3. Use a fork or a pastry cutter to incorporate the crisco into the flour. Until it looks like little balls.
  • 4. Take a tablespoon of cold water and add it to the mixture. Gently working it in.
  • 5. Continue to add water a tablespoon at a time until you form a ball of dough. It should still be a tiny bit dry. You don't want it soaked.
  • 6. Wrap it in wax paper and put it in the fridge for about an hour.
  • 7. Filling Directions
  • 8. Take all the filling ingredients and put them in a bowl and mix. Let them sit for about 15 minutes till the apples and ingredients get nice and juicy.
  • 9. At this point you want to preheat your oven to 425 degrees.
  • 10. Roll out your bottom crust and place in a 9 inch pie pan.Just a little note if you have a marble rolling pin put it in the freezer for about a half hour before you roll out the dough. It makes it much easier to roll.
  • 11. Put the apple mixture into crust and get ready to make your topping.
  • 12. Topping directions
  • 13. Take flour and brown sugar and incorporate them together using a wire whisk.
  • 14. Take your stick of cold butter and slice it into the mixture.
  • 15. With a fork or pastry cutter cut the butter into the flour mixture until it resembles little balls.
  • 16. Flute the edges of your pie crust BEFORE you put the crumb topping on.
  • 17. Spread crumb topping over the apples until it is completely covered.
  • 18. Bake at 425 degrees for 50 minutes... Cover the pie with foil the last 15 minutes of baking so your crumbs don't burn.
  • 19. The pies juices should be bubbling up through the crust. That's how you know it's done. Enjoy!

I think this is like a cross between a cobbler and a cake, rather than like a pie. I baked mine in a small glass baking dish instead of a pie plate, since it is a lot easier for me to cut squares than pie wedges! (Also I have a cover for my square dish.) For the baking mix, I used half Reduced Fat Bisquick and half Hodgson Mills Whole Wheat Buttermilk baking mix. FRENCH Apple Pie or is It Glazed Apple Cream Pie image

This double crust pie has a cream filling topped with cinnamon laced apples. To finish, a simple glaze is poured over the warm pie. Serve chilled for best results.

1/2 cup white sugar
1/2 cup milk
1/2 cup heavy cream
1/4 cup butter
2 tablespoons cornstarch
2 tablespoons milk
1 teaspoon vanilla extract
3 tart apples, peeled, cored and sliced
1 tablespoon all-purpose flour
1/4 teaspoon ground cinnamon
1 (15 ounce) package pastry for double-crust pie
1/2 cup confectioners' sugar
1 tablespoon milk
1/4 teaspoon vanilla extract
1 tablespoon butter, softened

Steps:

  • 1. In a medium saucepan over medium heat, combine 1/2 cup sugar, 1/2 cup milk, 1/2 cup cream, and 1/4 cup butter. Heat until butter is melted, stirring occasionally. In a small bowl, whisk together the cornstarch, 2 tablespoons milk, and vanilla; stir into saucepan. Cook until thickened, stirring constantly. Remove from heat, and set aside to cool slightly.
  • 2. Preheat oven to 400*F. In a medium bowl, combine the apples, flour, and cinnamon. Mix well.
  • 3. Line a 9 inch pie pan with pie dough. Pour thickened filling mixture into pastry-lined pie pan. Arrange apple mixture evenly over filling. Top with second crust, seal and flute the edges. Cut slits in top crust.
  • 4. Bake for 30 to 40 minutes, or until crust is golden brown and apples are tender. Cool for at least 30 minutes.
  • 5. In small bowl, combine confectioners' sugar, 1 tablespoon milk, 1/4 teaspoon vanilla, and 1 tablespoon softened butter. Blend until smooth; pour evenly over warm pie. Refrigerate for AT LEAST 1 1/2 hours before serving (longer is better).
  • My Note: I also added a little cinnamon to the glaze which added just the right extra touch in my opinion. Try this- you'll love it. Oh- and warm each slices in the microwave about 25-30 seconds. It's so much better that way! A couple of suggestions: 1) The recipe suggests serving the pie cold, but try it at room temperature, or slightly warm (30 seconds in the microwave should do it) 2) The thinner your apple slices, the better! Try it with pear and/or peach. Adding walnut pieces is a nice variation. Use aluminum foil at the end of baking to keep the crust from getting too brown. A little extra cinnamon or lemon zest in the glaze is good. (I use an extra deep dish, make a lattice top and extra custard and glaze.) Make 2 and hide 1 if you want leftovers. Delicious!

9 inches pie crusts (baked)
4 large apples
1 teaspoon orange peel (finely grated)
2/3 cup orange juice
4 tablespoons butter
1 cup sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 1/2 tablespoons cornstarch
1 1/2 tablespoons water
2 tablespoons lemon juice
8 ounces cream cheese
1 egg
1/2 cup almonds (chopped)
1/2 cup shredded coconut

Steps:

  • Peel and core apples.
  • Slice apples 1/2" thick to make 4 cups.
  • In 3 quart saucepan combine 1/2 t Orange peel, orange juice, butter, 2/3 C sugar and spices.
  • Bring to a boil and stir until sugar is dissolved.
  • Add apples,and cook until translucent.
  • Blend water and cornstatch and add to apples.
  • Cook until boils and thickens.
  • Remove from heat, add lemon juice and cool.
  • Whip cream cheese until fluffy and gradually beat in 1/3 C sugar and remaining orange peel.
  • Beat in the egg.
  • Turn cooled filling into baked crust.
  • Spoon whipped cheese mixture evenly over the top.
  • Sprinkle almonds and coconut over cheese.
  • Bake @350 degrees for 20-25 minutes until set and lightly browned.
  • Cool and Chill before serving.

6 c sliced, pared tart apples
2 tsp ground cinnamon
1/4 tsp nutmeg
3/4 c cream or milk
2 Tbsp margarine or butter,softened
2 large eggs
1/2 c brown sugar, lightly packed
1/4 c granulated sugar
1/2 c bisquick baking mix
STREUSEL TOPPING:
1 c bisquick baking mix
1/2 c chopped walnuts
1/3 c packed brown sugar
3 Tbsp firm margarine or butter

Steps:

  • 1. Heat oven to 325^. Grease a 10-inch pie plate. Mix apples and spices; pour into the buttered pie plate. Beat remaining ingredients until smooth,15 seconds in blender on high or 1 minute with hand beater. Pour into pour into plate over apple mixture. Sprinkle with topping. Bake until knife inserted in center comes out clean about 55-65 minutes, cool. Serve with a big scoop of ice cream. --- TOPPING: Mix Bisquick, nuts and brown sugar together. Cut margarine in, until crumbly. --- Note: High altitude 3500 to 6500 feet: Heat oven to 350^. Use 5 cups thinly sliced apples.

pastry for a double-crust 9-inch pie
1 lb cooking apple, peeled, cored, and sliced
2 tablespoons lemon juice
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/2 cup granulated sugar
1/4 cup raisins
1 cup packed light brown sugar
2 tablespoons all-purpose flour
2 tablespoons unsalted butter, cut in small pieces
1/2 ups pecan halves
1/4 cup milk
1/2 cup unsalted butter, room temperature
1 1/2 cups powdered sugar
1 tablespoon boiling water
1 teaspoon rum or 1 teaspoon brandy

Steps:

  • Set oven rack in lowest position and preheat to 450°. Roll out half the pastry and use to line a 9-inch pi plate. Place apples in pastry shell, mounding them toward the center. Sprinkle with lemon juice, nutmeg, and cinnamon. Spread 6 tablespoons of the granulated sugar and all of the raisins evenly over apples.
  • In a separate bowl, mix brown sugar, flour, and butter until well blended and spread this mixture over the apples. Sprinkle with pecans, and add 3 tablespoons of the milk. Roll out remaining pastry and place on pie. Seal and flute the edges. Cut steam vents. Brush top crust with remaining milk, and sprinkle with remaining granulated sugar. Bake 10 minutes, and then reduce oven temperature to 350° and bake an additional 30 minutes until crust is golden brown and filling is bubbly.
  • Meanwhile make the hard sauce. In a medium bowl, cream butter until fluffy, add powdered sugar and boiling water, and beat until well blended. Beat in rum or brandy. Set aside.
  • Cool pie briefly then cut in wedges. Serve on warmed pates topped with hard sauce. Let each slice stand a few minutes before serving so sauce has time to melt down into the filling.

3 tablespoons butter
4 heaping cups diced apples (4 to 5 apples)
8 cups cubed bread
2 cups half-and-half
1 cup whole milk
8 eggs
2 teaspoons vanilla
1/2 cup powdered sugar
1/2 teaspoon ground cinnamon
2 tablespoons milk

Steps:

  • In small bowl, mix granulated sugar and 1 1/2 teaspoons cinnamon with whisk.
  • Heat 10-inch skillet over medium-high heat; melt butter in skillet. Add apples and half of the cinnamon-sugar; stir to coat. Cook about 10 minutes or until apples are tender.
  • Butter 13x9-inch (3-quart) glass baking dish; spread half of the bread in bottom. Top with half of the apple mixture; repeat.
