Steps:

  • Heat olive oil in a large and deep non-stick skillet over medium-high heat.
  • Add onion and saute 3 minutes, then add garlic and saute 30 seconds longer. Pour onions into a 6 or 7 quart slow cooker (I like this one HERE).
  • Return skillet to medium-high eat, add beef and cook stirring occasionally until beef has browned.

  • Cover with lid and cook on low heat for 5 - 6 hours.

Tips:

  • Prep your ingredients in advance: Dicing and chopping vegetables, mincing garlic, and measuring spices beforehand will save you time and make the cooking process smoother.
  • Brown the beef and sausage: This step adds depth of flavor to the chili. Be sure to drain off any excess grease before adding the browned meat to the crock pot.
  • Use a variety of beans: Different types of beans, such as kidney, black, and pinto, offer different textures and flavors to the chili. You can also use a canned bean mix for convenience.
  • Add vegetables for a nutritious boost: Onions, bell peppers, and corn are classic chili additions, but you can also experiment with other vegetables like zucchini, carrots, or sweet potatoes.
  • Simmer for at least 4 hours: This allows the flavors to meld and develop fully. You can cook the chili for longer if desired, but keep an eye on it to prevent burning.
  • Taste and adjust seasonings as needed: Add more chili powder, cumin, or salt and pepper to taste. You can also stir in a bit of brown sugar or honey to balance the acidity of the tomatoes.
  • Serve with your favorite toppings: Shredded cheese, sour cream, diced avocado, and chopped cilantro are all popular chili toppings. You can also serve it with cornbread, crackers, or rice.

Conclusion:

Freda2's Crockpot Chili is a delicious and versatile dish that can be enjoyed by people of all ages. With its simple ingredients and easy preparation, it's a great option for busy weeknight meals or casual gatherings.
