1-1/2 cups miniature semisweet chocolate chips, divided
1/2 cup butter, softened
2/3 cup packed brown sugar
2 eggs
1-1/2 cups unsweetened applesauce
2 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
GLAZE:
1/2 cup miniature semisweet chocolate chips
1 tablespoon butter
2 to 3 tablespoons half-and-half cream
1/2 cup confectioners' sugar
1/4 teaspoon vanilla extract
Pinch salt

Steps:

  • Ina microwave-safe bowl, melt 1 cup chocolate chips; set aside to cool. In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs and cooled chocolate; mix well. Add applesauce and vanilla; set aside. Combine the flour, baking powder, baking soda and salt; add to creamed mixture and mix well. Stir in the remaining chocolate chips. , Spoon into four greased 5-3/4x3x2-in. loaf pans. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing to wire racks. , For glaze, melt chocolate chips and butter in a small heavy saucepan; stir in cream. Remove from the heat; stir in confectioners' sugar, vanilla and salt. Drizzle over warm breads. Cool completely.

1 cup sugar
2 eggs
1 3/4 cups flour
1 teaspoon baking soda
1/4 teaspoon cloves

1 cup cinnamon applesauce
1 cup semi -sweet chocolate chips

Steps:

  • Preheat oven to 325 degrees. Grease a 9"x5" loaf pan, set aside.
  • In your mixing bowl with an electric mixer, cream together butter, sugar and eggs.
  • Sift in four, baking soda and spices, alternating with applesauce, mixing slowly until it's all combined.
  • Fold in chocolate chips.
  • Pour into prepared loaf pan.
  • Bake for one hour, or until bread is golden brown on top and a toothpick inserted inside comes out clean. Cool for a bit in the pan before transferring to a wire rack to cool the rest of the way.

When they had passed, Amy inherited her mom's recipe book, which included several copies of this recipe, in both her mom's and Janie's handwritings. Amy has taken to making it every holiday for her family and friends. Baking and sharing this delicious bread with the rest of the family is the ultimate way to honor their memories and their special friendship.

Vegetable shortening, such as Crisco
2 cups all-purpose flour, plus more for dusting the pan
1 1/2 cups applesauce
1/2 cup (1 stick) unsalted butter, melted
1 teaspoon vanilla extract
1 cup sugar
2 teaspoons baking soda
1 teaspoon ground allspice
1 teaspoon ground cloves
1 teaspoon ground cinnamon

I got this from another recipe site, so I don't know the original source. It is nice and moist and has a good chocolately flavor. The original recipe said to put it in 2 1-lb. loaf pans, but they were so full that the middle was still gooey when the outside was done, so I'm suggesting 3 pans and a slightly shorter baking time.

1½ pounds boneless, skinless chicken breasts
salt and pepper (to taste)
¾ cup cream cheese (softened)
¾ cup shredded cheddar cheese (divided)
5 slices thick cut bacon (cooked and crumbled, divided)
1 ounce dry ranch dressing mix (1 package)
4 green onions (thinly sliced)

Steps:

  • Preheat oven to 400 degrees.
  • Spray bottom of 9x13" baking pan with non-stick cooking spray.
  • Pound chicken breasts until they about about 1/4" thick (you want them to all be the same thickness so that they finish cooking at the same time).
  • Place chicken in a single layer in the baking pan and season with salt and pepper (sometimes I also season the chicken with a little bit of onion powder and garlic powder as well).
  • In a medium bowl, mix together the cream cheese, half of the shredded cheddar cheese, half of the bacon crumbles, and the dry Ranch dressing mix.
  • Spread the cream cheese mixture evenly over all the chicken breasts in the pan.
  • Top the chicken with the remaining shredded cheddar cheese.
  • Cook in oven for 20-25 minutes or until chicken is fully cooked (internal temperature of 165 degrees).
  • Remove chicken from oven and top with remaining bacon crumbles and green onion.

1/2 c (1 stick) butter, at room temperature
1 1/3 c sugar
2 eggs
1 1/2 c unsweetened applesauce
3 c all purpose flour
1/4 c unsweetened cocoa powder
1 3/4 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
2/3 c milk chocolate chips
1/2 c dry-roasted unsalted peanuts, chopped
GARNISH:
1 tsp confectioners' sugar
1 tsp unsweetened cocoa powder

Steps:

  • 1. Heat oven to 350 degrees. Coat nonstick loaf pan (11-1/2 by 5-1/2 by 3 inches) or 2 loaf pans (8-1/2 by 4-1/2 by 2-3/8 inches) with nonstick vegetable cooking spray. Note: Picture shows bread made in a mold type bread pan available through cake decorating supply shops.
  • 2. Beat butter and sugar on medium speed in large bowl until smooth and fluffy, 2 minutes. Add eggs; beat 1 minute. Beat in applesauce (mixture will look curdled).
  • 3. Mix flour, cocoa, baking soda, salt, cinnamon and nutmeg in large bowl. Make well in center. Add applesauce mixture, chocolate chips and peanuts to well; stir into flour mixture until just combined and flour mixture is evenly moistened. Spoon mixture into prepared pan(s).
  • 4. Bake in 350 degrees oven 60 to 65 minutes, until toothpick tests clean. Let cool in pan(s) 15 minutes. Turn out onto rack; let cool completely. Garnish: Mix sugar and cocoa and dust bread with this mixture.
