CORN CHOWDER

Corn Chowder image

Make Tyler Florence's Corn Chowder recipe from Food Network, a creamy blend of sweet corn, potatoes and fresh thyme.

Provided by Tyler Florence

Categories     main-dish

Time 55m

Yield 8 servings

Number Of Ingredients 12

2 tablespoons butter
Extra-virgin olive oil
1 onion, diced
2 garlic cloves, minced
6 sprigs fresh thyme, leaves only
1/4 cup all-purpose flour
6 cups canned vegetable stock
2 cups heavy cream
2 Idaho potatoes, peeled and diced
6 ears corn
Salt and freshly ground black pepper
1/4 cup chopped fresh parsley leaves

Steps:

  • Heat the butter and 1 tablespoon olive oil in a soup pot over medium heat. Add the onion, garlic, and thyme and cook until the vegetables are good and soft, 8 to 10 minutes. Dust the vegetables with flour and stir to coat everything well. Pour in the vegetable stock and bring to a boil. Add the cream and the potatoes, bring to a boil and boil hard for about 7 minutes, until the potatoes break down (this will help to thicken the soup and give it a good texture).
  • Cut the corn kernels off the cob and add to the soup. Season with salt and pepper and simmer until the corn is soft, about 10 to 12 minutes. Stir in the parsley and give it another little drink of olive oil. Ladle the soup into bowls and serve.

ANDOUILLE SAUSAGE AND CORN CHOWDER

Andouille Sausage and Corn Chowder image

This is a slightly spicy, smoky, hearty corn chowder. The recipe was given to me by a dear friend many years ago and the original source is unknown. I have adapted it to suit my family's tastes. If you prefer a thicker chowder, you can stir in a can of creamed corn. Serve this with cornbread or a crusty French loaf for a lovely meal, enjoy!

Tips:

  • Use fresh corn. Fresh corn on the cob is best for this chowder, but you can also use frozen or canned corn if you don't have any fresh corn on hand.
  • Don't overcook the corn. The corn should be cooked until it is tender but still has a bit of a bite to it. If you overcook the corn, it will become mushy and lose its flavor.
  • Use a good-quality chicken broth. The chicken broth is the base of this chowder, so it's important to use a good-quality broth that has a lot of flavor. You can use homemade chicken broth or a store-bought broth.
  • Add your favorite vegetables. This recipe is a great way to use up leftover vegetables, so feel free to add any vegetables that you like. Some good options include carrots, celery, potatoes, and green beans.
  • Season the chowder to your taste. This recipe is a good starting point, but you may need to adjust the seasonings to your taste. Add more salt, pepper, or herbs as needed.

Conclusion:

Frankfurter corn chowder is a hearty and flavorful soup that is perfect for a cold winter day. This recipe is easy to make and can be tailored to your own taste. So next time you're looking for a quick and easy soup to make, give this recipe a try!
