1/2 cup finely chopped onion
2 tbsp. chopped garlic
1 1/2 cups roughly chopped spinach leaves
1/2 cup fat-free ricotta cheese
1/4 cup fat-free cream cheese, room temperature
2 tbsp. shredded part-skim mozzarella cheese
1/4 tsp. ground nutmeg
1/4 tsp. salt
2 tsp. reduced-fat Parmesan-style grated topping
1 tsp. garlic powder

Steps:

  • Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.
  • Place mushroom caps on the sheet, rounded sides down. Bake until tender, 12 to 14 minutes. Leave oven on.

1 teaspoon extra virgin olive oil
4 ounces ground Italian sausage ((I used sweet))
1 cup fresh spinach ((packed))
1 tablespoon minced garlic
2 tablespoons Ricotta cheese
2 tablespoons Mozzarella cheese
1 tablespoon Parmesan cheese
1 tablespoon Romano cheese
2 tablespoons Italian breadcrumbs
3/4 cup marinara sauce ((homemade or store bought))
1/4 cup heavy cream

Steps:

  • Preheat the oven to 425 degrees F. Remove the stems from the mushrooms and wiping off any dirt with a damp cloth. Set aside.
  • In a large nonstick skillet, heat the oil over medium high heat; then add the ground sausage and brown until no longer pink (approximately 5 minutes).

Kosher salt and freshly ground pepper
1 1/4 cups shredded part-skim mozzarella cheese (about 6 ounces)
1/3 cup reduced-fat sour cream or nonfat Greek yogurt
1 red jalapeno pepper, seeded and diced (optional)
Olive oil cooking spray
4 medium portobello mushrooms
1 tablespoon unsalted butter
4 scallions, sliced
1 poblano or Anaheim chile pepper, seeded and coarsely chopped
