FORGOTTEN COOKIES

Forgotten Cookies image

These meringues are crispy on the outside and marshmallow-y on the inside, with bits of chocolate throughout. The best part of this recipe is that you turn off the heat once the cookies go in the oven, so you can truly forget about them until the morning. A spring-loaded ice cream scoop makes fast work of forming the meringues and you can use any size you like.

Time 4h15m

Yield 20 to 40 cookies, depending on size of scoop

Number Of Ingredients 6

3 large egg whites, at room temperature
Pinch of fine salt
3/4 teaspoon cream of tartar
1 cup superfine sugar
1 teaspoon pure vanilla extract
1 1/4 cups mini semisweet chocolate chips, plus more for garnish

Steps:

  • Position 2 oven racks in the center of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment.
  • Beat the egg whites and salt in a large bowl on medium speed until frothy. Add the cream of tartar and increase the speed to medium high. Beat in the sugar, 1 tablespoon at a time, then add the vanilla extract. Continue beating until the meringue is thick, glossy and holds stiff peaks, about 6 minutes. Gently fold in the chocolate chips with a rubber spatula.
  • Using a spring-loaded ice-cream scoop (or 2 spoons, using one to nudge the meringue off the other), scoop the meringue into mounds about 2 inches apart on the prepared baking sheets. Sprinkle each cookie with a few more chocolate chips.
  • Put the baking sheets in the oven, then immediately turn off the oven. Let the meringues stand in the oven until dry, at least 4 hours and up to overnight.

These cookies should never be forgotten.

Provided by Joy Howard

Time 8h20m

Yield 12 cookies

Number Of Ingredients 7

2 egg whites
¼ teaspoon cream of tartar
1 teaspoon vanilla extract
Pinch kosher salt
½ cup caster sugar
½ cup semisweet chocolate chips
½ cup toasted chopped pecans

Steps:

  • Heat the oven to 350° and line a baking sheet with parchment paper. In a stand mixer set at medium speed, whisk the eggs until frothy. Add the cream of tartar, vanilla, and salt and continue to whisk until soft peaks form. Add 1 tablespoon sugar and continue whisking until the sugar has dissolved. Continue adding the sugar, 2 tablespoons at a time, letting the sugar dissolve completely between each addition (you can check by rubbing a small bit of the meringue between your fingers to make sure it's not grainy). Continue whisking until stiff peaks form.
  • Use a spatula to fold in the chocolate chips and pecans. Use a large tablespoon to spoon heaping portions of the meringue on the baking sheet, spacing them 2 inches apart (you should have enough for 12 cookies). Place in the oven and bake 5 minutes, the turn off the heat. Let the cookies dry in the oven for 8 hours or preferably overnight.

FORGOTTEN COOKIES

Here's the recipe you need when the kids tell you at 9 pm that it's their turn to bring cookies tomorrow!

Provided by MizzNezz

Categories     Drop Cookies

Time 8h8m

Yield 2 dozen

Number Of Ingredients 5

2 large egg whites
1/4 teaspoon salt
2/3 cup sugar
1 cup finely chopped nuts
1 cup chocolate chips (mini ones are best)

Steps:

  • Preheat oven to 350°.
  • Beat egg whites until stiff.
  • Add salt and sugar and beat a little more.
  • Fold in nuts and chips.
  • Drop batter by teaspoons on baking sheets.
  • Place in oven and turn oven off. Let set overnight (no peeking!).

Tips:

  • Use High-Quality Ingredients: Fresh, top-notch ingredients yield the best-tasting cookies. Opt for real butter instead of margarine, pure vanilla extract, and premium chocolate chips.
  • Proper Measuring: Accurate measurements are crucial for cookie success. Use a kitchen scale for precise measurements of dry ingredients and a liquid measuring cup for wet ingredients.
  • Chilling the Dough: Chilling the cookie dough before baking firms it up, resulting in thicker, chewier cookies. Don't skip this step, especially for drop cookies.
  • Avoid Overmixing: Overmixing the cookie dough can lead to tough, dense cookies. Mix only until the ingredients are well combined, being careful not to overdevelop the gluten.
  • Baking Times: Bake the cookies until they are set around the edges but still slightly soft in the center. Overbaking dries them out. Keep an eye on the oven and adjust the baking time if needed.
  • Cooling the Cookies: Allow the cookies to cool completely on a wire rack before storing or enjoying. This helps them firm up and develop their full flavor.

Conclusion:

The forgotten party cookies featured in this article offer a delightful variety of flavors and textures, from the chewy Chocolate Chip Cookies to the crispy Oatmeal Lace Cookies. With careful attention to ingredients, measurements, and baking techniques, you can create these nostalgic treats that are sure to bring back fond memories. Experiment with different recipes, personalize them with your favorite mix-ins, and enjoy the satisfaction of baking homemade cookies that will be a hit at any gathering.
